About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I once got in a debate with another traveler about khao soi. They said it had a curry broth and I said it had a plain broth with spiced meat. Turns out they were talking about the Thai version and I was talking about the Lao version. Same name but completely different flavor!

Lao khao soi actually a different dish with the same name. Khao soi means rice cut in the Tai languages and the coconut curry version popular in Myanmar and Northern Thailand originates from Chinese Muslims from Yunnan who migrated through the Tai speaking region and finally settled in Chiangmai. The clear soup version with tomato pork mince is also called "khao soi" in the Tai speaking world and originates from the Tai groups from the China/Myanmar/Laos region and is also known as Shan noodles in Myanmar.

@@bend.6091 thanks for the insight but I never denied that the dish didn’t come from Burma as it most likely did since the ingredient used and cooking methods are indeed very Burmese-like and Chin Ho Muslims that migrated into northern Thailand were very likely already used to Burmese cooking techniques by the time they reached Chiangmai. The major difference is that Burmese tend to add chickpea powder to thicken the curry broth whilst the northern Thai style generally does not include this. Also the general Burmese term for noodles “khao swe” or “khauk swe” most likely derives from the Shan people aka the Tai of which ever group first introduced (khao soi) noodles to Burmese speakers since khao swe can’t be broken down into separate syllable meanings in Burmese but can be done so in the Tai languages (I’m guessing tai nua) meaning rice cut. Moreover Shan noodles or Lao style khao soi which uses a clear broth and tomato minced meat is indeed called “khao Soi” and eaten in the Tai speaking region between Yunnan, Shan state, northern Laos and far north Thailand and shared among the neighbouring Tai yai, Tai lue, Tai Nua and Tai yuan groups. Also khanom jeen and khanom sen or khao sen do indeed refer to the same food and the reason the terms are different is that central Thai and northern Thai groups ended up using different descriptions to coin their own term since they are separate Tai speaking groups and were introduced to the food through separate means; hence the difference in how they prepare the noodle itself as a dish.

@@harrypo1808 Sorry for my explain but the word Khao Soi is not come from "Cut Rice". I don't understand why many misunderstand that. It's the way central Thai try to explain northern Thai culture with the frame of thought, which is wrong. Tai-Kadai speaks in many regions in Asian (mostly SE.) , yet their words are not the same. Not just Thai (which north, south, northeast, and central -- all in tai-kadai but many of their words are different. Not talk about thai Kadai in other regions eg. Tai Dam in VN, Zhuang in southerN CH, etc.) If all the words are the same you would understand a famous century old song Noijaiya (น้อยไจยา) which is in northen Thai yet I have never see any central Thai or even a single person modern northen Thai who could understand all of their words since the lyric is in northen Thai and some words are very old they don't use it anymore. It's the same way some try to explain the word "Nahm Ngew (น้ำเงี้ยว) comes from one of the ingredient the dried opera flower which Thai called Dok-Ngew (ดอกงิ้ว). It's wrong. There are dishes in northern Thai with no dried opera flower at all yet we called it Ngew eg. Khao Ngew/Khao Kan Chin (ข้าวเงี้ยว/ข้าวกั๊นจิ๊น) They don't know the word Ngeaw (เงี้ยว) is what we called Shan State people, more specific Tai Yai. the word still recored in many document including a famous novel "Queen Uma's Daimond (เพชรพระอุมา)" many Thai know. these are dishes thai derived from Shan people who came to trade and/or settle in northen Thai. Back to our topic: historian believe the word "Khao Soi" derived from Myanmar word "Ohn No Khao Swe" The Khao Swe (เข่าสเว้) is the root of the word "Khao Soi" that's why they are so close. Anybody can copy the Myanmar word I said and search for yourself if needed. Sorry if any typo (which iknow lots since i do them all the time)

@@harrypo1808 You haven't said anything that Khao Soi didn't come from Myanmar and I haven't said anything that you said it that way sir/ms. What I explained is that the word "Khao Soi" does not come from "cut rice" but come from the word Ohn No Khao Swe. By conclude the word Khao Soi come from cut rice is the way to explain something based on different frame of thought/experience -- in this case it's central Thai againt nothern Thai -- which could lead anybody who do that to misunderstanding. North and central Thai are both in Tai-Kadai family but they don't use all the same words including other Tai-Kdai in other regions. Another sample is the Khao Kan Chin I said above. Kan (กํ๊น) and Chin (จิ๊น) have no meaning in central thai but they have meanings in teh north. Kan กั๊น = squeeze and Chin จิ๊น = meats which central Thai use the word Neu (เนื้อ)

If this is the KZbin version of the recipe on Pailin's website, OMG. I have made this over 50 times and routinely have 2 tbs blocks (ice cube trays) of the curry paste (shallots, tumeric, black cardamom) in the freezer. Insanely good

I went to Chiang Mai in 2017, which is how I know about Khao Soi. I was there for 5 days and ate this dish almost every day. Also, the Pad Kra Pao and Lemongrass Tea.

When I lived in Phitsanulok, Khao Soi was a weekend tradition for me (even if it was from the Big C/Tesco Lotus food courts) I absolutely LOVE it, especially with extra pickled mustard greens on top!

I love that you described this dish as not having originated in Thailand. I have found so many fights between Thai people and our neighboring countries' netizens over Thai food, which I think is unnecessary. Thailand is a child of multiple cultures. We do have many cultures that are influenced by many cultures, which doesn't mean the result of cultural integration is a “Copycat.” And, of course, we can’t claim that all similar dishes are Thai-originated recipes, either.

We can claim it's "Northern-Thai Style" Khao Soi, I think the most important is we have "ownership" over certain recipe. However, as you said, we can't and shouldn't go all over place to claim very variety type of dish to be from us, that's just pathetic.

When I think of Khao Soi and many more I would think of ramen which we all agree it's Japanese dish, yet it is not Japanese originated but Chinese. Even the word ramen come from Chinese word lamian 拉麵. Same thing with beer and cheese which originated from middle east/Egypt, wine from Greek, many ingredients from America continent, etc. On the opposite at the same time I would think of many Thai dishes others said it's from them yet they have no concrete prove of their origin at all. Some even contradict to their cuisine characteristic eg. their cuisine hardly use coconut milk yet that dish need the ingredient or the way a Vietnamese commented under the comment of @HuongMad in the "Fresh Tuna Spring Roll Recipe ก๋วยเตี๋ยวลุยสวน" by Pai that "...It's just her take on Vietnamese fresh spring roll and called Thai food..." according to his own words. You can see his comment by searching for Pai's vid and ask if the VNese spring roll is close to Kuy-Tay-Lui-Suan for yourself. Both ways are nonsense. Culture is like liquid. It spreads even today. When people comes to other land they took their culture with them and spread it to others. This process happened long before the concept of country as city-state with territory, laws, etc. as we know today exist and it happen not just in this region but all over the globe. To judge this modern day world based on something happened centuries ago is very unwise no matter where you are from.

@@Mr.Huntermoon Actually coconut milk is not limited to Thai cuisine sir. In fact, as a people who interested in culture, the way of using coconut milk in Thai believe to be derived from south Asia sailors who came to trade in the Malacca canal centuries ago. So the using of coconut milk prevail in Indo-Malay culture and southern/central Thai, yet you will see no coconut milk in northern and northeastern Thai cuisine (along with the fact that there is less coconut in these regions compared to the south/central). Even for this Khao Soi, although a northern Thai dish, some recipe need no coconut milk at all.

Years ago I made your original recipe for khao soi for my then boyfriend because it was his favourite dish. He told me it was on par with the "just average" one that he had in Thailand but not as good as the amazing one he had in Thailand. And you know, for me, I took that as a big win. (:

Fell in love with Khao Soi from at Khao Soi Khun Yai in Chiang Mai, in 2000. She makes the best ever, and there is always a queue of Thai locals outside of her simple restaurant. She was my first stop when I went back in 2017. I've been making it at home ever since, but with shop bought paste and adding turmeric etc.I will making it from scratch thanks to you Pailin ❤ I even make extra broth to use as a soup, or as a curry sauce to eat over chips and rice. A kind of Thai version of the Chinese chips, fried rice and curry sauce that we love so much in the North of England. Khao Soi is my fave dish in all the worls.❤

Thanks for another amazing video as always! We have a Thai street food restaurant in my area (greater Boston) that seems to do a really great job with authenticity and when I order from there, I like to find one of your videos of the same dish to learn a little about what I’m eating and see if it’s Pailin-approved. I’m happy to say that their khao soi passed with flying colors! And I even went and grabbed some black cardamom (I do a lot of Chinese style home cooking) to smell it and see if we could detect it in the curry. We also just smile throughout all your videos because you are just so fun and upbeat!

Pai thank you so much for another great recipe! I grew up eating a somewhat similar dish and even lived in Mae Sot for a year but can’t believe I never had Khao Soi until now! The recipe was easy to follow and turned out great. I doubled the paste, thinking I might freeze half but it smelled so good I just had to cook a double batch.

Reporting back- my sister and her husbands family just got back from 6 weeks in Thailand (mostly the north). I wanted to make them a big pot of something for when they got home that they could easily eat for a a day or two so I figured I’d give this a go. They loved it so much and said it was better than the khao soi they had in Thailand!

Khao Soi was the very first Thai dish that we had at a local eatery near our hotel when we landed in Chiang Mai. Didn't have any idea about this dish but we were blown away and had to order a second serving each!

Hi Pailin, I so appreciate your recipes (with videos 👍). Having lived in Thailand, I do have a few cook books on Thai food. Out of them I cooked Thai Food with increasing confidence since I left the country a long time ago. Your teaching which I follow since quite some time however has taken my cooking on the next level. Thank you very very much for the inspiration. I just bought your "Sabai" cook book as well. What a beautiful carefully done book! I tried the first dish yesterday, "Non-fry Sweet & Sour Pork". It turned out absolutely perfect and it is so easy to make, too! 🙏🏼) I'll try the Khao Soi of course. Just finally ordered the cast iron pot I always meant to buy 💪

Had this in Chiang mai about 5 years ago. I’ve only been able to find it a handful of times outside of Thailand and it has always disappointed. I tried it first at a vegan only restaurant (I avoid vegan food like the plague), the chicken was substituted for jack fruit and it was the best thing I had ever tasted. Want to go back to northern Thailand specifically for this dish. Is it becoming as popular as pad Thai though? I don’t think so. Most Thai restaurants over here have a hard time knowing what the dish is, they usually rebut me by saying “ohhhhh Northern dish” I’ve only met one other person that brought it up in conversation with me. I honestly hope it stays this way because it will make that trip back to Thailand so much more worth it. I can also blow my friends away at dinner parties with this recipe and they will have no idea what sorcery I have cooked up 👀

Khao Soi is by far my favorite Thai dish! I ate it first in 2019 in Chiang Mai, learned the recipe in a Thai Kitchen school and made it ever since😊 I used the red curry paste because I didn't really find all the ingredients for the paste in my country but if its really so that Khao Soi is the new Pad Thai I'm sure my local Asian store might begin to store black coriander etc. I will try and make the paste from scratch the next time I plan on cooking Khao Soi!

Me living in Thailand for 18 years now, Khao Soi was my very first Thai dish in Chiang Mai and is still up to date my favorite Thai dish. Unfortunately, I live in South Thailand and Northern style food is rare here. Your recipe is very authentic and I'd love to try it out at home!

I absolutely loved your original recipe. I have to compare it with this one now. 😊 I have used the old one many times already. Where we live in the Netherlands, none of the Thai restaurants have Khao Soi on the menu. So I had to do it myself. Making the curry is so interesting mixing all these different ingredients. And the smell while cooking mmmmmmm I am the only non-Thai in our household but the rest absolutely love my Thai dish 😂 I only always used the double amount of the curry for the Khao Soi to get strong enough taste. Maybe it is the type of chili's Thank you so much for this recipe

This Thai "Khao Soi" was ranked the best soup in the world in 2022 by TasteAtlas. 😉👍 Khao Soi is a staple in Thailand's north and normally comes with either a stewed chicken drumstick or beef. 🤤🤩👍🇹🇭

Did a road trip from BKK to Chiang Mai a while back, and I ate Khao Soi for lunch at each town we stopped at. Never got bored because each town had a slightly differently flavour/texture/richness. Was a lot of fun.

Love Khao Soi. It brings back memories of the sweet Burmese lady who served me this in UK. I'll try the paste, but I'm a lady boy.Think I will just grind the spices and use a grinder to make the paste.

Yay! I was actually just looking up your Khao Soi recipe and wondered if you’d do a new one. I saw Hong Thaimee make it on I think Epicurious, but I wanted to see what you’d do. So I’m very happy for this recipe. I only discovered this dish exists a few weeks ago.😊 I’m happy I actually have black cardamom in my pantry because I’ve used it to make Vindaloo. So I’m all set, except for the turmeric!

I'm going to have to see if i can find black cardamom so i can make this. And maybe make some egg noodles as there are no Asian markets near me. I love kao soi. We lived just down the street from a kao soi shop in Chiang Mai in 1974-75 that we were told the king liked to visit when he came north. I never saw him there but the kao soi was awesome. I'm sure we ate there at least a couple time a month if not more often. And then we had fresh coconut waffles from the lady that sat at the front door on our way home for dessert. I think the shop has moved but oh the memories of that soup live on.

For many, the first time you try khao soi it's like "OMG where have you been all my life!". Provided it's a good one.

The sound Pai makes at 14:38 is exactly me everytime I taste something amazing! 😂 Oh man, I remember the first time I had khao soi near the east gate of Chiang Mai, I was teary eyed from how good it was 🥺🥺🥺

The easiest way I know to clean stainless steel is vinegar. No need to boil or soak - just hit it with some vinegar and it almost cleans itself. Worst case scenario, I use a rough scrubbing sponge with the vinegar, but even that only takes a few seconds.

I'm not sure why, but this reminds me of ramen. Whatever the closest analogue is in East Asian cuisine, I love how there are a lot of noodle dishes throughout Southeast and East Asia.

There´s a small Thai Restaurant in Berlin (Papaya) that serves this, although slightly varied. It´s the only thing I ever eat there, it´s SO GOOD! I could swim in that broth! They don´t serve the condiments, but add red onions, soy sprouts and thai coriander to it. I have yet to find a restaurant in Berlin that serves a good Laksa, so this is a welcome alternative.

I sometimes think that KZbin and other social media definitely propagate the popularity of random Thai food like Khao Soi (and others like "leng saap") because previously it was a relatively unknown dish that one could only have in Thailand. When my parents had their restaurants in the past, it was never on the radar whatsoever. Fast forward to today, we're putting it on the menu for our new upcoming restaurant.
