I love rosemary with oven potatoes. I usually use fresh green and put it on the potatoes after the browning is done. The bright green looks really good on them. NO KETCHUP on this beautiful food!

A blast from the very recent past. I meant to make it to New London to visit Daddy Jack, but now that will never happen. I never knew him personally but I feel like I did from watching his videos. Smellavision!!! I miss the man. I had my second Open heart surgery in seven years in June and I feel fortunate to still be here but it takes its toll. My best to his daughters and the family.

@@andrefecteau The price of beef has gone way up, so has pork.. almost to the point that BBQ restaurants have got to be hurting bad with ribs and beef brisket vs menu prices people are accustomed to. Still cheaper to make at home but the margin has to be getting close for those folks with overhead, because leases are going up too. I would hate to have a regular BBQ joint about now without alcohol sales to prop them up.

@@andrefecteau I'm a meat cutter, LoL. Pork ribs and butts doubled in price, and red meat by at least two thirds in the past two and a half months, people are having a hard time even getting enough fresh chicken wings although prices are a lot more stable in chicken. Restaurants may not make most profits from protein but they can lose quite a bit, and specifically BBQ joints without liquor sales are getting pinched pretty badly. I talk to these folks on a daily basis. Store sales are doing great however, but the cheaper cuts are definitely selling better than they should this time of year. In the Southeast US anyway.

Jack, love this technique for fries - seems like everyone else wants to over-complicate fries (soak, halfway cook, chill and cook some more etc)...takes way too long. But yours is simple, easy and looks real good. Thanks

I discovered the art of pan frying my steaks about 4 years ago during a bad winter snow. Wanted steak but the grill on the patio was buried in snow. Tossed two sirloins in my cast iron pan with a little Montreal seasoning and a little butter. Slow cooked them!! Then I put onions and cut mushrooms in the pan after. Simply heaven. Love your videos sir!

I’ve been watching these videos for months and looked you up, saw the restaurant is temporarily closed and checked the menu. Stuffed flounder sounds out of this world. I wouldn’t mind seeing how you would do a meatloaf sandwich, golumpki, a lobster roll, or some city chicken. All the best.

You had me at "Pan fried steak." So basically your thumbnail did the trick. Back in the day we used to do prime rib at work and then we could have some for ourselves. So we rolled our prime rib in blackening seasoning and blackened both sides in a cast iron skillet just until the seasoning started to color. Top that off with either Maitre D Hotel butter or a massive gob of bleu cheese & nom until you can nom no more. Oh yeah, instant sub as well, thanks for making me hungry!
