Good afternoon friends! Today I'm taking you to Naples with a traditional recipe that adults and children like so much! I'll show you the foolproof recipe for Neapolitan croquettes, known as panzarotti, that my husband's grandmother, Nonna Ersia, taught me. Neapolitan panzarotti are potato croquettes typical of Neapolitan cuisine with a soft and stringy heart of provola, a pinch of pepper and a little parsley. Preparing them at home is very easy but the recipe won't be perfect if you don't use the right potatoes! To prevent the croquettes from falling apart during frying, it is essential to choose floury potatoes, preferably old ones. Another important point that my husband's grandmother taught me is to rest in the fridge before frying the panzarotti.
