Dr. Vinod K.Mishra MBBS, MD, DM (Gastro) is a senior gastroenterologist , hepatologist, and endoscopist. He is an alumini of prestigious post graduate institute of medical education & research, (PGIMER) Chandigarh. He is a busy gastroenterologist performing about 1000 endoscopic procedures per month. He specializes in liver problems and all gastrointestinal diseases. He is trained in endoscopy, colonoscopy, ERCP, and endoscopic ultrasound.He has previously worked at All India Institute of Medical Sciences, New Delhi and Medical College, Jabalpur. He was President of UP chapter of Gastroenterology society.
The GASTRO LIVER HOSPITAL, where he works is a gastroenterology and hepatology super speciality hospital. Hospital has MEDICAL,and SURGICAL wings. It has ICU and plenty of accommodation facilities of different levels. The hospital performs all complicated and advanced surgeries under team of very senior and experienced gastro surgeon . All laparoscopic and open surgeries done .Advanced operations as whipple’s preocedure and oespophageal replacement s are done regularly not to mention of routine surgeries.This is possibily the only centre in north india doing cholecystectomy with intra operative ERCP on regular basis for Gall Bladder stone and CBD stones.The endoscopy unit has following facilities----

My father said same thing that puri absorb less oil than parathas! 😊Thank you so much sir!❤ and I cook always but never use fried oil second time! 😊I pour out to the forest ground! ❤Or other place outside on ground! 😊And I always use regular iron tava, ceramic tava or pan, or for some things I use cast iron tava, ❤and for deep frying I use none coating nonstick kadai, or cast iron kadai!😊

Good evening Dr saab, It was a nice review. But i have following questions:- 1. In many other health videos, cooking by using Non-stick utensils has been warned due to 'Teflon' coating which is considered unhealthy in the long run. 2. Can we cook pooris on low-flame to make them healthy? Request clarify Thank you🙏

आपने नन् स्टिक में पराठा बनाने के लिए बोले है जो स्वास्थ्य के लिए नन् स्टिक पैन बहुत ही हानी कारक होती है । उसका ब्लाक कोटेड खाना में मिल जाते हैं जो क्षति कारक है।

Smoke point 400 deg. C से नीचे 350 deg C के आस पास पूरी तलिये और फिर उस तेल को सब्ज़ियों की कुकिंग में धीरे धीरे इस्तेमाल करके ख़त्म करते तो पूरी भी स्वस्थ भोजन बन जाएगी। teflon lining जो non stick wares में लगती है वह भी हानिकारक है। डॉ. मिश्रा जी ने अच्छी videos बनायी हैं उनका धन्यवाद।

The contents are very important. Actually instead of eating whole wheat it's better to eat including pulses, vegetables. But oil should always be in moderation. Traditional paratha was not so buttery or oily. Nowadays for taste and crunch oil is badly used. Paratha without roasted oil and applying a little ghee is the best method.

सर रोटी अच्छी है। स्वास्थ्य की दृष्टि से भी और आर्थिक दृष्टि से भी। रोटी 5% GST से बनती है और परांठा 18% GST से बनता है।

Sir, we can do one ( which we use to do) make Paraantha like Roti, put it in plate, then put home made white butter on it and enjoy eating garma~garam. NO FRYING ON TAWA.

Sir I was expecting some more details like I agree paratha cooks on tawa and we use 1 tsp to fry but i believe that small quantity of oil on tawa easily should cross its boiling point and cause of colestrol or transfer. .simple theory like if you boil 1 liter oil in pan or 1 spoon oil on tawa. .which have more probability to become cross its boiling point...so I believe puri would be less harmful compare to paratha...share your thought on that

Best way is to cook prantha without oil on tava and after cooking, put oil/ ghee/ butter when cooked prantha is kept in serving plate. By this way temp will not be high enough to deteriorate quality of oil/ ghee.

Temp of oil is higher if frying is done on tava ( as in case of prantha), because oil touches hot tava and reaches boiling point/ smoking point earlier. Therefore, deterioration of oil is more incase of tava fry as compared to deep fry or Kadhai fry. doctor Sahab, please correct this fact too.

.prantha can be cooked in less oil also.Non stick cookwares r also v v harmful. In India parantha is made in every family for years and in many families on daily basis. We just have to do one thing that is...do exercise or walk to digest it. Poori is something u can't eat too much and don't digest easily So Paranth in less oil or ghee is the best specially in winters.

Dr ji dono popular hain lekin koi bhi alternate din yeh nahin khata, kabhi bread butter, ya omlet bhi hota hai, shadi me bahut kuchh hota hai jaruri nahin ki parantha ya poori hi khayi jaye log roti, tawa roti , chawal dal, shadi me parantha kum jagah banta hai, baki jankari achhi hai thanks

मेरा मानना है कि जब भी हम पूड़ी तले कम से कम तेल में तले (जितना तलनेे के लिए जरूरी हो) ताकि तेल की बरबादी ना हो और तलने के एक दम बाद उस तेल को सब्जी इत्यादि में प्रयोग कर ले ताकि तेल की wastage ना हो।

My sister in law said that take less oil to fry poori and do not use same oil for frying another item. You can use that oil in making other vegetable but take two or three T spoons for each vegetable.
