Pasta alla Norma, a recipe that alone recalls Sicily, the sun and the sea. Aubergines, sauce and lots of love to cook one of the most famous pasta dishes in the world.

🍳 INGREDIENTS 🍳
Tortiglioni 320 g
coarse salt to taste
eggplant 2
peanut oil 700 g
tomato puree 750 g
garlic 2 cloves
basil 10 leaves
extra virgin olive oil 30 g
salted ricotta 200 g
basil to taste
🍳 PREPARATION 🍳
00:00 - To make pasta alla Norma, start with the sauce. Peel the garlic and let it fry in a large pan together with the extra virgin olive oil. Add the tomato puree and season with salt. Leave to cook for 10-15 minutes on low heat to thicken the gravy.
01:25 - Wash and cut the aubergines after removing the stem. Cut them into 1 cm cubes per side and slice 12 slices with a mandolin for serving.
03:28 - Bring the peanut oil to a temperature of 175° max and fry a few eggplants at a time. Fry the cubes and slices, dipping them for about a minute each. As they are cooked, drain them on a sheet of absorbent paper.
5:00 - Cook the pasta in boiling salted water.
5:30 - After patting the aubergines, add them to the sauce, also add the whole or hand-broken basil. Mix everything and the sauce is ready. .
06:13 - Add the pasta to the sauce and mix it all together for a couple of minutes. All you have to do is serve, decorating the dish with ricotta salata, fried aubergine slices and fresh basil. Your pasta alla Norma is ready!
