Broccoli and guanciale pasta is a tasty and inexpensive first course that perfectly combines the soft taste of vegetables with the crunchy pork cheek. Today I'll tell you step by step how to do it.

I chose the bucatini for this pasta with guanciale and broccoli because I like the pasta to feel under your teeth. Fine spaghetti have never made me crazy. This tasty and colorful first course, yes! It's a lot. You can enjoy it in all its flavor, especially in winter, when it's broccoli season.
Man even though it is autumn, I found some good ones at the market. In addition, I had at home a wonderful seasoned and peppery guanciale from Salumificio CLAI and the light bulb went on: why not make a delicious broccoli and crispy guanciale pasta and the sprint given by pecorino?

01:04 Let's get to know the Seasoned guanciale of nuovo.clai.it/. Let's have an aperitif with bread and guanciale
02:28 Cut the guanciale into thin slices and make it crisp in a wok
02:55 Clean the broccoli, cut them into small pieces and keep them in a bowl
04:08 Wash and clean a red potato and cut it into small cubes. Boil it in boiling water
04:32 Drop the pasta into the same pot
04:42 Raise the guanciale when ready and keep it in a bowl. Recover its fat in another bowl, filtering it to remove excess pepper. Clean the wok and pour in the right amount of bacon fat to finish mixing the pasta
05:30 In the same pot as the pasta and potatoes, drop the broccoli to boil them
05:47 Cut the chilli into small pieces
05:55 Raise the pasta al dente and finish cooking it and stir it in the wok with the fat from the bacon together with the broccoli and potatoes. Add a ladle of cooking water if necessary and the chopped red pepper
06:35 Grate plenty of pecorino romano and add it to the pan over the heat off. Finish whipping
07:36 Serve a nice portion of pasta with broccoli, potatoes and pecorino cheese and garnish with crispy crumbled bacon
