I make mushroom pastelles instead of meat some years. It’s great tasting and fully vegan.

Cooking the olives & capers draws the salt out, best to add when assembling pastelle

I know right I don't know what dry pastelle he's been eating honestly he is not wrong some are dry but those ingredients you listed do fix that so quick

The cornmeal is too thick for my tastes. I like it thin and more meat than cornmeal.

Spot on. The skill in pastel is a thin (but not paper thin) casing.

Yes you can. I season and steam the fish..I like king fish best for this. After cooking remove the skin and bones and flake..then add olives raisin capers and any other addition that you would like. You can add tomato paste or roucou for colour. Reserve any liquid that you have after steaming in case you need to moisten the mixture. You can also fry the fish without dredging in flour..it works just as well.

Would the thai chili sauce make it spicy by chance? I would be making for kids who don’t eat spicy or peppery food.

I use tomato paste and roucou. I also reserve the olive brine and use it to moisten the meat if I need some liquid.

You do know to remove your Ring before kneading any kind of dough. Or use a dough whisk. Or use a glove maan.

This may be YOUR VERSION OF PASTELLE but it is a far cry from authentic. Try learning to use real refined Corn Flour….NOT CORNMEAL!!!!!
