I make mushroom pastelles instead of meat some years. It’s great tasting and fully vegan.

The cornmeal is too thick for my tastes. I like it thin and more meat than cornmeal.

Spot on. The skill in pastel is a thin (but not paper thin) casing.

Yes you can. I season and steam the fish..I like king fish best for this. After cooking remove the skin and bones and flake..then add olives raisin capers and any other addition that you would like. You can add tomato paste or roucou for colour. Reserve any liquid that you have after steaming in case you need to moisten the mixture. You can also fry the fish without dredging in flour..it works just as well.

I use tomato paste and roucou. I also reserve the olive brine and use it to moisten the meat if I need some liquid.

This may be YOUR VERSION OF PASTELLE but it is a far cry from authentic. Try learning to use real refined Corn Flour….NOT CORNMEAL!!!!!
