All i oli is NEVER prepared with mayonnaise. We do it by crushing garlic on a mortar until you get a paste. Then season with salt and pour olive oil little by little while stirring the mix until the texture gets "mayonnaisy."

It's not a bad recipe, but this has nothing to do with patatas bravas. The sauce is the focus of the dish and it's ingredients are secret to the point where the only place where you can get legit patatas bravas is in the "Las Bravas" restaurant in Madrid. This probably tastes great but it's a completely different thing. Maybe i'm getting too deffensive, but this is like seeing someone mixing cinamon, sugar and orange juice and saying he made coca cola. And yes, the difference is THAT big. I cant find a single connection between Bravas sauce and this sauce apart from the fact that they both are a sauce of some kind.

if you put a heaping teaspoon of baking soda into your boiling liquid it will break down the starch on the surface of the potato causing an even crispier crust and deeper color when you fry.

I live in Spain, and this is as close as it gets and I LOVE patatas bravas! I'm also a model. But this channel is inspirational and I found it by accident. I get everything I need. I also like the highs and lows emphasis in your voice; makes presentation engaging and anticipatory- which is not only the key to entertaining, but INSPIRING and motivating. By the way, there's an easy, tasty, simpler and healthy way to make aoli. Use a hand mixer and a tall cup that 's just wide enough to accommodate the circumference of the mixer blade, 2 cloves garlic, a pinch of salt, and a 2 to 1 ratio of sunflower oil (here, we call it "girasol") to fat-free milk. For example: 2 half cups or 1 cup sunflower oil to 1/2 cup of fat-free milk. Mix all together, wait about 5 minutes, then insert the mixer and slowly and seductively move the mixer up and down in small increments until you feel the mixture solidify. It's finished in about 3 minutes and it's addicting, tastes good on anything. Thanks so much, man! You're groovin' this channel!

In my country it is called Aloo Chaat 😍😍😍 Instead of Aioli we use beaten thick yoghurt along with tamarind chutney and green chilli+mint chutney. The salt has more or less the same spices. We use just one type of chilli(only dried red chilli flakes are used) and sometimes a pinch of asafoetida is used to enhance the flavour.

Just 2 things about the recipee. It looks great and it will probablu taste great, but when you cut the poteitos, you should break them. You start the cut, and then twist the knife. That way it has more area, and that makes more crispiness after you fry them. The other thing its the brava and mayo. Usually you serve brava at one side, and allioli at the other, and the mix its great, so that sauce you made will taste amazing, but that wont be the taste of salsa brava. Brava taste a bit like a shiracha with more cayenne than garlic.

OMG talk about great quarantine food , I made these this morning for breakfast with scrambled eggs and a couple strips of bacon but The Patatas Bravas were 🔥 people! I will say I'm not big on Mayo so I use sour cream, the best thing was the crispiness on the outside and the soft cloud of potato on the inside. I can't imagine frying potatoes any other way ever again. My husband was impressed!

Sooo, this recipe has been saved in my "watch later" list, which means, "cook later", for a little over 3 yrs. I finally made it. They are so delicious, aioli and all!! The only step I substituted was the tomato paste, used homemade ketchup instead. Too lazy to open a new can, & didn't feel like thawing out my frozen portions 😏 Thx, Chef John!!

idk now that i went to brown rice my fat loss almost stopped, oatmeal with a spoon of honey gave me the best results i have ever seen, but brown rice did help me retain the weight where as potatoes put fat on me, food for thought. damn i wish i had some potatoes, crispy crunchy tasty potatoes :-)
