I think everyone deserves a second chance, especially those who are honest and have integrity. Paula is definitely one of those people. Self made, hard worker, and determined. I actually enjoy her youtube specials over her past food network episodes. Talking to her relatives who are sitting right there in the kitchen with her, and yelling at her dogs to stop barking, because weve allllll had to do that a time or two!! Love this!!

When she was on food network yrs ago I became really sick n spent lots of time n bed n an out of hospital took them a few yrs to figure out I had a major blockage due to crohns disease I couldn't really eat n what I did came rt back up but I watched her n my husband would say I can't understand how u can't eat an u watch those cooking shows seems like torture but it strangely made me happy 🙃

If this danged old quarantine has a silver lining, it is getting to visit with Paula in her kitchen. It feels as if I am right there.
I have so enjoyed your stories that goes along with your cooking...recalling those great memories. Chicken salad is one of those things, that can be made so many ways. I like this way. However I was raised on a different way. My mom will cook her's the way her mom did. She takes 4-6 chicken breasts on the bone and boil it until it falls off the bone. Then by hand tears apart the chicken meat into fine pieces. The rest is to your taste...we use of course nothing but "DUKES" mayonnaise, diced celery, finely chopped fresh homemade sweet pickle. Then to finish it...which is what my grandmother would add...and of course we do it to this day, add a few table spoons of that sweet pickle juice to the chicken salad. Mix and taste and add another tablespoon if you want..or until it suits your tastes. This is so delicious...even though I am partial to this method :)

Paula, I just love you to pieces. You are so sweet. I know what it's like to be a single mom too. My husband passed away when I was 29. I had 2 children-one was 10 and the other was 4. I didn't go to college b/c my career path was decided early on that I wanted to be a wife and a mom. I never even toyed with the idea of being anything else. It's so hard when life changes without your control, and all of a sudden you are the only breadwinner in the family, and you have no skills or education to speak of. I am so glad that God has his hand on you sweet lady, and you became such a great success. I know b/c you worked so hard to become who and what you've become, you'll always appreciate it more, for it. God bless you Paula. There is not a day that goes by without me watching several of your videos. I love your cookbooks, and hearing your stories and watching you cook. I love it that it appears that you don't take life too seriously. I LOVE dogs, Paula. Show your dogs during your taping some days. A house is not a house, without a couple of fweet doggies in it!

@evan truiyen I never said I was perfect. And I'm calling her out because she's done this behavior for years and other people knew about it and said nothing. Until she finally got called out by an employee who worked there for YEARS and couldn't take it anymore. She never apologized to the employee, she never apologized to her other employees, she has never apologized to the black community that he's lived in that trusted her all those years. So until you live in Louisiana, and you have been through what these people have been through, you have no right to say anything about how great Paula Deen is and what I may be about. She has not been forgiven because she is not sorry and that the total truth of it. I really loved Paula deen and her shows and I was a faithful watcher of hers since the very 1st show she did on Food Network TV and for me to hear what she had done and said to her employees was very hard for me to stomach and at first, I didn't believe it until it was confirmed. People are fickle; one minute they love someone, the next, they wanna throw you to the lions. You can afford be fickle because you're white and that's just the bottom line of it. As black people, we are so sick and tired of having to be the ones to be forgiving and letting things go.

I have been listening to different recipes of yours here on you tube enjoying myself as I am cookingThen....I get to this one!. Well girl after hearing your story I am reflecting back on my own story! I also owned three restaurants EVENTUALLY... However, I did the VERY SAME. I COULD NOT AFFORD TO PAY HELP, I owed my soul to the company store and everyone else. LOL LOL Yes Paula nobody knows the back door scenes and how very hard restaurant work is UNTIL they have lived it. I have to say it was the hardest I ever worked in my life. I soooo appreciate you telling your story. It brought back such wonderful memories of our customers that became family. I'm a caregiver and I used Paula Deen's shows to spark my client's appetites when they were struggling with that. Lord knows I've never been able to get thru one without heading into the kitchen for a snack. Not sure if its her genuine warmth, her family always being involved or the simple down home recipes but whatever it is...it works! I call it the Paula Deen effect.

For years my favorite chicken salad was the one my mom made with a lot of diced sweet pickle and curry powder. Many years later I found a recipe for a chicken Waldorf salad which got me experimenting with an assortment of chicken salads that had a fruit component. One I made had had thinly sliced red onion, blue cheese, pecans and Mandarin oranges. It became my husband's favorite. He's been gone 10 years but fixing that salad still makes him feel close.

@@michellekelly2937 There isn't a recipe. My mother only measured if she was baking a cake. It had chopped up leftover chicken, celery, red pepper and sweet pickle (all diced small), mayo, chopped lettuce and maybe a half teaspoon of curry powder, salt and pepper and a couple spoons of honey.

I think this is by far my most FAVORITE of all your videos. The story of your humble beginnings and how it just organically came out. I could almost feel the emotions from you. So true, God blesses hard work. And I love how you appreciate the tough times and trials you had to go through because that's what made you who you are today. I make a chicken salad and tuna salad each week for lunches since we retired as I got tired of getting my brain going each meal to think something up. LOL I can cook one day for almost the whole week. And I love it that way! I was surprised to see my recipe is just like yours but I had never added eggs to mine. Now, my tuna (albacore tuna) I add sweet relish and hard boiled eggs to and love it on a lettuce leaf or whatever.......but it's so good. I use my insta pot to cook the chicken breast and so I have plenty but I love your chicken on the grill flavor better I would think as you say ......... I think in grilling all the juices would be so good on the meat. Loved your video again as always and I am excited to try it with lemon pepper in the mix......also fruit.......great ideas you have always had! Blessings and stay well!

I do the same things with hiding onions. My daughter and I love onions. My husband despises onions. But lasagna and so many dishes are not the same without it. I cut them up so small, and make sure to cook them till they are soft. You still get the flavor and everything but he has yet to say i don’t like this cause there is onions in it. I have even asked him. Was that good? Delicious ate it up. 😂😂😂

I did the same for my kids but for those who can find the smallest itty bitty bit can also puree the onions and you'll get the flavor but no onions.

Luv your cookin'/fixin' ideas.....Reminded me (sorta) of a unintentional egg salad recipe I concocted while on duty (fire dept) about 35 yrs ago....Was on an egg salad sammich kick....Forgot mayo one shift, so used chunky peanut butter to glue smooshed eggs together to spread.....Worked great, since I love eggs and peanut separately til then....A bit too sticky, tho, so the next shift I mixed mayo and peanut butter 50-50....Was on a roll, but nobody else liked the idea.....Ya made me hungry (no cooked chicken handy), so made my old mixture, then lightly salted with garlic salt and added some salsa verde (herdez--mild).....Even better!..... Another mix I came up with a couple weeks ago for spicy salad dressing or dip--- Caesar dressing 50-50 with Herdez Guacamole Salsa Verde, medium..... ;o)~~

Thanks for the recipe. Chicken salad is one of my very favorite foods to eat. Sometimes I start to crave me some good old -fashioned Chicken salad. They're very versatile and can be made from very simple ingredients. I'm with you Miss Paula, my favorite is also the Southern style one. I always add some boiled eggs, mayo, sweet salad cube pickles, sliced celery, S&P and a lil onion...It's especially good in the summer on a hot day with a tall glass of iced tea with lemon. Thanks for the recipes, keep them coming please!
