Quick, simple and easy-to-make Pav Bhaji recipe made with mixed vegetables at home.

Ingredients
For Boiling Vegetables
Water, पानी
1 cup fresh Green peas, हरी मटर
4-5 French beans, chopped, फ्रेंच बींस
2 medium size Carrots, peeled, slice, गाजर
2 medium size Potatoes, peeled, cube, आलू
1 cup Cauliflower, roughly chopped, फूलगोभी
Salt to taste, नमक स्वादअनुसार
2 tbsp Butter, cubed, मक्खन
For Tempering
3-4 tbsp Butter, cubed, मक्खन
3 medium size onions, chopped, प्याज
2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 medium size capsicums, chopped, शिमला मिर्च
3 medium size Tomatoes, chopped, टमाटर
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tbsp Pav bhaji masala, पाव भाजी मसाला
Boiled & mashed vegetables, उबली सब्जियाँ
2-4 tbsp Butter, for finishing, मक्खन
For Toasting Pav
1 tbsp Butter, cubed, मक्खन
2-4 pav, लादी पाव
For Garnish
Lemon wedges, नींबू की फांक
2 Green chillies, less spicy & chopped, हरी मिर्च
½ onion, chopped, प्याज
½ tbsp Butter, cubed, मक्खन
Coriander sprig, धनिया पत्ता
Process
For Boiling Vegetables
In a sauce pot or handi, add water and bring it to a boil.
Add green peas, french beans, carrots, potatoes, cauliflower, salt to taste, butter and boil them until cooked well.
Mash the vegetables with the help of masher and make it mushy.
Keep it aside for further use.
For Tempering
In a shallow pan, add butter, onions and saute until golden brown.
Add ginger garlic paste and saute for a minute. Add capsicum, tomatoes and cook for a while.
Add degi red chili powder, pav bhaji masala and let masalas cook for 1-2 minutes.
Add boiled vegetables and simmer for 5-6 minutes or until thick.
Finish the bhaji with butter and transfer it on a serving dish.
Garnish it with butter and coriander sprig.
Serve hot with toasted pav and chopped onions.
For Toasting Pav
In a pan or a tawa, add butter, once it's hot, add pav and toast it from both the sides.
Keep it aside for further use.
