In Europe this ring literally works at any store or even coffee stand. Contactless is accepted everywhere so yeah it would be good if the US could integrate it more. Apparently it’s due to apple charging banks a fee and the banks don’t want to pay it so they don’t like people using contactless.

You don't need a device for the ring to work after setup has been done. So you can use your ring while your phone's at home and do not need your phone or NFC enabled on your phone to make use of the ring features
