Most cooks in most small establishments have never received formal training. The most they have received is sanitary handling and space maintenance training. The sad part of everything we witness here, is that it isn't necessary. None of these kitchens are busy. They all have the appropriate equipment. They are efficient and properly sized...though some are large enough for a full restaurant. It always comes down to people. Effort, energy, intent, vision, ability, and, most importantly, common sense.
