It’s because we feel sorry for joe’s past. I know some people don’t even have a past. They are just born psychopaths but as humans we are curious to know why someone is the way they are. Curious to find answers. In season 2 we are shown flashbacks off his past. It makes us think maybe that’s the reason joe is like that. If he didn’t go through those things then maybe things might of been different but sometimes that’s not the case. At the end he try’s to change and when love shows that she has a dark side too. He tries to kill her because maybe he wants a perfectly imperfect girl and he kinda “feels what beck felt”. He sees himself and he hates that. Kinda looks like he wants to change. When Love says she has a baby Joe doesn’t kill her . This shows us that his hearts in the right place and we forget that he’s a murderer.

Yea I rooted for him and wanted him to change but when he killed Ryan so brutally (he literally stabbed him so many times in the chest it was hard to watch) that kinda showed be that he was never gonna change and he actually enjoyed killing. He doesn't think straight and never gonna be satisfied
