Personally I always taste a bit of the vodka, when like Lidia does it's added at the right time. And that lil bit of flavor just makes the dish spectacular.

When we entertain & i prepare penne ala vodka for friends, my hubs makes espresso martinis as everyone waits for dinner. So the vodka is consumed a vouple different ways! Mille grazie, Lidia 😊❤

Thank you thank you thank you for posting this Ms. Lidia I saw this kind of by accident on PBS sitting on the edge of my moms bed about 7 years ago or so, had never heard of vodka sauce until I saw this episode! I did forget a couple of ingredients over the years but I couldn’t find this video like, AT ALL!! I still have requests for me to make this sauce so now that I have the complete ingredients I know I’m gonna blow it out the park!! Peace & blessings beautiful ✨✨🩷

I believe vodka in pasta sauce was developed in the 60s in Rome, and it had its moment of glory but was soon regarded as a trendy moment to be rapidly forgotten. That’s why you won’t find it in classic Italian cookbooks.

True. I grew up in a world in which no one used pasta water in the sauce. Nowadays you see it all the time. But it's a good thing.

Great question, John! It helps maintain a cohesive texture, allowing the creaminess to meld with the tomato base and lessens the chance of the different components separating.

You are such a great cook you wouldn’t need Vodka. Seriously. People out there couldn’t tell the difference if you made one with and one with one without the vodka. I would love for you to demonstrate .Happy Cooking as always.

Sorry Lydia I love almost everything you put up here, but the cream seems all wrong and not very Italian at all. One of the things I hate about American cooking generally - far too much use of cream to give the umami It's totally unnecessary if you are adding Parmigiano anyway. (Italy-loving Brit writing here I guess we are lucky living so close).
