Peperonata, a Simple Bell Pepper Stew Italians Love!

Peperonata is an Italian traditional dish that’s made with an assortment of bell peppers or capsicums, with tomato sauce and basil. There are a thousand uses, like bruschetta, on top of creamy polenta, for your pasta sauce, on toast with eggs, goat cheese, on pizza, on potato, on rice etc. I just love it on crusty sourdough bread with a little olive oil and freshly torn basil leaves.
It’s totally delicious, and tastes even better the following day. So make a big batch of it, freeze half ready to use for quick meals. I can make a pasta meal in 15 minutes using Peperonata, how convenient is that!

Joel my good Aussie friend, great recipe & a low budget meal these days & big time for us as we grow multi colored bell peppers along with a variety of hot peppers in our garden here in Kentucky ( so basically free peppers) . I like the rigatoni or bucatini sometimes as the sauce/flavor gets in the hollow part of the pasta. I use a few small diced hot peppers in place of red chili flakes & that grilled bread is perfect for serving plus here free range, cageless eggs are delicious, I'd use 2-3 on mine. Cheers mate !

I make pepper vegetables almost identically. For once, I also like to use frozen goods here. This is available here in 1 kilogram bags with 3 colored and already cut into strips peppers. Not exactly like fresh goods, but acceptable in the case of peppers, if you want to go fast. I like to serve it as a side dish to meat, patties or fish. The idea with pasta is very good! That's what I'm trying.
