LOL, I actually got a bit of a surprise when i saw that, I had forgotten about it. I have made a lot of tose and still don't have one for myself! I kep giving them to visitors who see them in the kitchen. Maybe I should keep them in a cupboard? But them they don't get used as much. Dilemmas, dilemmas. Best Wishes, Brendan.

Every time the description of the food involves “working persons food” it is always delicious and this is no exception! I love braised tough cuts and the way the peppercorns and garlic cooked down infusing the beef and wine is perfecto! Have a great weekend John!

Thanks Joe, not only was it indeed delicious, but the house does smell wonderful while it cooks. I've made saucier versions by just adding another bottle of wine- they're both good.

Yes, I liked Chef John's version using beef short ribs. (All his cooking is wonderful!) He got me started on making this several years ago; why I haven't made a video before who knows? We like it authentic, and sometimes more saucy by just adding an extra 1/2 bottle of wine at the second half. Give it a try, I think you could rock this recipe out on your Weber by giving the meat some "wood kissed Vortex" prior to cooking! Thanks for all your kind words, Sal. Always appreciate you!

Wow John, what a simple recipe but the Peposo looks amazing. I love the way the wine and beef cooked down beautifully. Can't believe I'll be eating something that will be taking me back to the 1400s!

Thanks Kevin, yes this recipe is old, but having been popular for hundreds of years says way more about it than I ever could! If you want it a bit saucy just add 1/2 bottle (or a bit more) wine at the second half. I do that sometimes when serving it over mashed potatoes. I can see how this hearty meal fueled the brick-makers for the last half of their tough workday. Cook on, brother!

Thanks a bunch for your words, Patrick! Yes this recipe epitomizes the "less is more" style of cooking. Those brick-makers back then had the right idea. All the flavors diffuse together and turn the beef into something special, while turning your kitchen into a delightfully smelling room. Don't be shy with the peppercorns when you make this, they are the whole idea for this beefy meal......plus the wine of course 👍
