Good job guys. I have decided next time i make fudege or pera i am going to use my Kitchenaid to beat/whip the mixture instead of doing all that stiring, it is hard on the arms

that's a lot of stirring 😧 but love how u explain everything in details. ☺ only thing i would change is maybe fast forward some parts of the videos (like wen you're stirring the pot, chipping/cutting seasoning etc...) to make it shorter. (just an friendly thought.) thank u.

🙂Well, many have their own means of shortening that time, for example one person said they stir by the open window and it cools faster ( that is what takes the time) or you can use a fan while stirring.

Traditionally made with whole cow's milk, powdered and evaporated milk. Can also add 1 potspoon of condensed milk just before done thereby using 4 kinds of milk 🌻

Lol, the measurement is equal part milk to sugar. Use the same container to measure both the milk and sugar. In this case it will be 6 cups sugar to 1 litre milk.

Sorry to hear that Erika, for the Pera, boiling too long makes it too hard, and not boiling enough leaves it too soft. Was yours too soft or hard? If it is not getting stiff enough once you remove from the stove and begin turning, you can add some milk powder in order to get it thick to be able to form. If it gets too hard once you have removed from the stove and start turning, you can add some milk and return to the stove for a little bit, turning to soften it again. Then repeat the ending process. Hope this helps.

Thank you for the tutorial. You did not use butter/ghee, cardamom or saffron in your recipe and the technique of high heat and then cooling and stirring is new. I make them in a microwave oven but I want to stop that method (not healthy, all the waves changing proteins structure) and use the pot method. Thumbs up.

You can use less sugar Nazya, but it will take longer to harden so you will have to turn for longer.

It is your recipe passed down generations, we are descendants od Indian foreparents who were brought here ( Guyana and surrounding places ) by the British to work as indentured labourers on the sugar plantations . So oir great grand parents were from India. We have the same recipes but it has changed a bit over time.

If anybody thinks it’s too much sugar or way with too much sugar then here’s a tip don’t make it! Sorry to hear that Monica, there are a few things that could have been the issue there 1. It needed to be boiled for a bit longer. OR 2. It needed a bit more sugar In your case there, adding a bit of milk powder after you had removed it and noticed it was too soft, would have fixed that. You would add enough milk powder to get it stiff enough for rolling. Hope this helps. I know it is not an easy recipe.

Hi I think we have a video with the evaporated milk. You can use Cow's milk instead, the only thing is that you will have to stir a bit more because the Cow's milk produces more lumps than the evaporated milk.

Ok sorry about that, I don't understand hindi, but the translation says that it is sticking to the pot and your hands. If that is correct then it may need more turning and a bit longer on the stove. keep in mind if you cook it for too long also it will become too HARD, so you have to find the right consistency of the pera mixture to know when its done. It should have a little bit of stickiness, not too sticky seems like yours had too much, which means it needed a little bit more cooking and turning.

It is evaporated milk and sugar, the video shows that and it under the video the ingredients says evaporated milk and sugar so that is what it is.
