@@MyLittleKitchenRecipes that’s a certainty as it looks amazing. I’ll make it just to sample the broth. Some years ago I went for dim sum in a Chinese restaurant near the Post Office Tower. We had dumplings from western china that were made from lamb with cumin. Amazing. Recently I’ve been experimenting with Wonton soup and had some leftover lamb mince from making one of your keema dishes when I remembered those dumplings so I made cumin flavoured lamb wontons in a Yakni from a Madhur Jaffrey recipe for lamb pullao. The wontons were brilliant but they didn’t quite sit with yakni and I couldn’t quite put my finger on why. I’ll make a little extra of yours and try again.

I was going to ask which pressure cooker you use but you've already answered that. It's been a very long time since I've had a pressure cooker, mines so old, bought it in 2007 and don't trust the rubber seal and the whistle. I'd rather buy a new one. My Prime would at least do same day delivery or next day. Thanks. ❤❤

Do you think a bouquet garni of the spices would work? As in, fry them first, fish them out and wrap them up and put them back in? My family always used ground spices but a lot of recipes I want to try use whole and I hate eating around them!

Absolutely. That would work too.

A quick question. I once had a conversation with some Indian friends who were born and educated in India. I was surprised to discover that when they talked of mutton they meant goat and were surprised to find that to me it means mature sheep. I suspect as a Brit you’ll agree with me but is that what you mean? It’s made me wonder every time I see recipe for a mutton curry if that’s what’s meant 😂
@MyLittleKitchenRecipes6 ай бұрын
Yes in India and Pakistan it's normally goat meat, whereas here in the UK it's mature sheep. The flavour in mutton is much better in my opinion. Lamb or beef can be substituted but cooking time will require adjusting.
