after seeing the fire drive spam video, I thought that the only attack that could hit his stick was the fire drive, now I know that any single attack can also do the trick

Only some single-hit attacks can; you have to be able to select between parts of the same target. Shade Fist can't, for instance.

Is there a sort of list of how good each partner is with an explanation as to how? I'd be interested in reading it if so.

Generally its agreed upon that the best to worst partner list would go something like Goombella Yoshi Koops Flurrie Vivian Bobbery Mowz Though an explanation for each would be rather long. lol Some can be debated like Flurrie and Vivian (though I can see this I think Flurrie is slightly better) I'd also put Goombella, Yoshi and Koops in a tier of their own.

Is that Flurrie strat consistent? It seems to rely on very specific attacks happening in just the right order, and to block exactly 4 of very quick projectiles. Are you manipulating Magnus 2.0's attack pattern by lowering its HP to a certain threshold or something?

Yeah you can. When you attack his staff it keeps him from attacking. Fire Drive badge completely mutilates him.

Yes. It's called Quick Change. You have to trade 8 Star Pieces to Dazzle (Who is in the Room Left of the West Sewer Entrance in Rougeport) to get it.
