Join me as I recreate one of my favourite Persian dishes-barbecue baby chicken with a delightful herb selection. This home variation, cooked on the stovetop, retains all the vibrant flavours of the original dish, despite the absence of a charcoal barbecue.
We start by making a yogurt and lemon juice marinade with saffron, Greek yogurt, and thinly sliced onion. This marinade deeply penetrates the chicken, making it tender and succulent. After an overnight rest, the chicken is seared to perfection on the stovetop, ensuring a beautiful caramelisation.
The dish is finished with a “herb garden” garnish of mint, tarragon, coriander, and basil, along with walnuts and crumbled feta cheese. This Persian-inspired saffron-marinated chicken is a wonderful home adaptation of the classic charcoal-grilled version.
