dont know why thumb downing happening here...i have czech family members...this recipe is correct...i built my pickled sausages off of this recipe...forever grateful....even went as far as learning how to make polish serdelki sausage.

I appreciate seeing this recipe. My mother made it. I remember the steps but I wasn’t sure if I remembered all the ingredients. I’ll be making it in the coming week.

czechcookbook made it 4 days ago, and we just couldn't wait any longer to try it, so we had some yesterday! DELICIOUS! But definitely needs another couple of more days marinating!

I'm so going to make it! :) the other day I made fresh pickles from cucumber to use on our lamb burgers. I was amazed that after just 15 minutes the cucumber tasted like a pickle, except more fresh and crunchy than from a jar. I love cooking!

I'm making some pickled sausages right now using a different recipe but will try this one when they are gone. I'm also fermenting cabbage into sauerkraut and it will all be ready about the same time. I like to grill my pickled sausages and serve them with my Homemade sauerkraut! The combination is amazing...Thanks for sharing your recipe

I am making some pickled sausages right now, but with a different recipe. As soon as my jars are empty I'll be making yours! They look great and the recipe looks like it pairs well with a hearty beer or ale. Excellent snack for watching football. :)

It is best to do with colder brine and let it sit in the fridge longer. Well if you are not going to eat the whole jar at once you can easily do a slow sampling over next week/two to get an idea when they get satisfactory "ripe".

Before seeing this video, I tried pickling kielbasa on my own. It turned out kind of bland. This is the recipe I've been looking for. Also, it authentic Czech!

Hello! I just made this, but I sliced the spanish onions really finely on a mandolin... I used a Polish Silesian sausage, as well as a similar British sausage, and I had no whole allspice, so I used ground... I also used french mustard... and I am Italian... so this is a very cosmopolitan dish!! Thanks for the jar tip, too! I have used wide-mouth kilner jars, so getting the ingredients into the jars was easy! I am going to leave it for 2 weeks, so I will report back!

I love pickled sausage! I was wondering if there was a big difference between the two mustard's you used? Which did you prefer? I have some Kielbasa in the fridge and I think I'm going to give this a try. thank you for sharing the recipe.

Mary Ann, you don't really taste the mustard that much. The pickling juice is more overpowering than the mustard. I would experiment and try both mustards or which ever one you have at home. Let me know if you try it and how you like it. :-)

@czechcookbook Dobrýden, strašně se mi líbí vaše videa rozhodně doma pomůžou s vařením, akorát mám dotaz ohledně jakých klobas by jste použila v Česku vím že utopence se dají koupit v podstatě všude ale nikdy není nad domácím, jinak děkuju za recepty těším se na to až se dotoho pustím. :)

Thank you for your video. I have a few questions that maybe you can answer. Have you ever used "pickling spice" and if so, how much? I just wonder if this would be simpler? Does it matter if your sausage has a skin on it? So, would most any sausage you bought at the store work, maybe even the little cocktail sausages?

I have not use pickling spice so I am not sure how much you would need. With skin it is ok. We just always use only one type of sausage which klbasa is the closest one. I am sure other sausages will be also tasty and will work. :)

Do you need to keep them refrigerated at all times? I just made these with my husband following your recipe (for the most part - added hot pepper flakes instead of allspice).

czechcookbook I can tell you already, that my husband was very excited by the way you prepare your sausages (butterflied) and stuffed with onions, then packed in more raw onions into the jars to fill up the empty spaces. We have three jars marinading in the fridge and I think we’re going to wait for a week and then try them. But yes, I will definitely share our review of the finished product. He loves pickled sausages and the ones we buy from the store are no where near as good as the way you make them, I think I can safely say that right now.

+MrZELIG9 I would say probably 2-3 weeks. Maybe somebody will be able to respond if they keep them longer. They don't last this long at my house. :)

I am not sure how long is the maximum. But I had it open in the fridge for about close to a month and it was still great. Longer it marinates, it becomes better.
