I grew up eating pickled eggs. I’m in my late 50’s. I’ve never refrigerated pickled eggs. Pickling preserves the food it’s pickled in and therefore does not need refrigeration. I have never refrigerated my ketchup or mustard. And I’m not dead and never got sick. There’s so many food items we refrigerate that doesn’t need to be

I refrigerate my sauces bc prefer them cold thats it there's no other change in them maybe flavor with time I've had hot sauces I left out get spicier and others get weaker so I guess maybe some hot sauces are better refrigerated for consistency of flavor but you won't get sick Least I didn't

​@user-zf3mb2rh9n I ate half a loave of bread that tasted really odd I finally pulled it all out to inspect and found it had begun molding on the very far end that I hadn't reached yet so I just saved what wasn't moldy tasted funny sure but I didn't get sick and when you're just using em for lunch meat sandwiches the flavor gets drowned out by meat and mustard

"Shelf stable" means having a pH of less than 4.6 to preserve food, distilled white whine vinegar (5%) has a pH of about 2.4 so should be all good and, if you have any doubt, you can very cheaply buy a pH meter or test strips. Pickled eggs are still a popular pub snack in more rural/traditional parts of England. Sometimes they'll use clear vinegar and add a slice or two of beetroot to colour them. Eggs are seasonal of course so, before factory farming, preserving them was essential. I've never seen pickled eggs refrigerated but then in Europe we don't generally refrigerate eggs generally, eggs store well for a couple of weeks as long as they are left unwashed (washing them removes the biofilm that preserves them.)

Totally agree with your overseas comments; I too had to live 16 years in Germany and they too do not have eggs in the refrigerator section of the stores. They are usually in the vicinity and on an end cap.

Obviously undiluted vinegar is an essential ingredient for unrefrigerated storage. But what about salt? Is it necessary or will undiluted vinegar on its own be enough? Is salt added for preservation purposes or for flavor?

@@birkhatt8969 salt as well is used as a preservative which is why all canned goods like canned meat and canned vegetables contain salt. But the vinegar alone should do it. Salt is just adds more preservation

Oh great idea! I’ve got a bumpa crop of beets in my home garden. The beets will no doubt add a bit of sweetness as well as the lovely colour you mentioned to the white vinegar and is a lot cheaper than mixing with balsamic vinegar. That’s the beauty of using EVERYTHING that we so sorely neglect in today’s throw away society. I’ve planted a dozen grape vines, next step… make my own wine and vinegar!

My Louisiana pickled egg boil recipe is as follows...1 Quart jar. About 10 boiled medium eggs... Three cups of white vinegar, no apple cider. 1 Tablespoon of Zatarains crab boil. 1 teaspoon of old bay. 1 Tablespoon of salt. 1Tablespoon of sugar. 1 Tablespoon of garlic powder. 1 Tablespoon of onion powder. Bring to a slow boil and pour over your shelled eggs in the jar all the way to the top. Tighten cap good and hide eggs for at least 3 weeks.

Sharron have you tried making deviled eggs with pickled eggs? so delicious. Just slice them down the legnth. ... scoopthe yolks out and press them thru a siff, mix the yolks with a bit of mayonaise and spices and herbs to taste andput the mixture back into the egg-white halves. i like to add finely chopped smoked salmon into the yolk mixture and fresh dill.

back when I was a kid, you know when they used to beat rocks together to start a fire, LOL. My brother and I would mow yards or baby set, whatever it took to raise money to get a 4-H lamb or Pig. You alone we're responsible for the upkeep and the feeding of the animal. I have to say it was bittersweet at the end of fair season when the animal went up for auction. The money was nice but you had put your heart and soul into this animal. So thank you for allowing your children to experience something that they will be able to carry with them the rest of their lives.

A bar in my hometown always had pickled eggs on the counter for 50cents. The eggs would give my friend rancid gas and he could clear out that little bar especially combined with budweiser.

After I eat my pickled beets, I pour the leftover beet juice over my eggs and let them set for a couple of weeks then enjoy them while the rest of family must endure me till the eggs are gone!!! :-) Have a great day!!!

Wow, I thought the whole point of pickling and water-glassing, was so you could store food without refrigeration. But daddy government said. Good job as always. Teaching the youngens, work and reward. I know "grown-ups" that still don't get it.

It is! And it's not necessary to refrigerate pickled stuff. It's good for a year or two unrefrigerated. Pickled stuff does go sour after a long time.

Pickling salt is regular salt with no additives. Its pure salt. The iodine and anti-caking agents can cause discolring.

I bartended in a honkytonk about 40 years ago, we had pickled eggs, bologna and whole dill pickles setting out (never refrigerated)... no one died or got sick (except when they drank too much..lol). I love pickled rope bologna!!!

I make pickled quail eggs, and they sit in the cabinet for quite a while. I even sell them and nobody has died or even gotten sick, matter of fact they keep coming back for more! Thx for the video!!!

I just started pickling quail eggs. My recipe is 1tbl spoon sugar and salt ,garlic salt, seasoning salt and hot pepper flakes in a Mason jar with white vinegar. I am going to try Frank's red hot sauce mixed with white vinegar next.

I live in PA, and so I learned to make pickled beets and eggs. I kind of “wing it, but here’s my general recipe: 1 dozen eggs, boiled and peeled 2 15-ounce cans of sliced beets , undrained 1 part cider vinegar to 1 part water, enough to cover eggs (try 1 cup of each; can add more if needed) 1 T. Sugar 2 T. Pickling spices Heat all liquids, including beet juice, sugar, and spices, for about 5 minutes on stove. Layer eggs and beets in a large jar with a lid. I use a 1-gallon jar. Pour heated liquid into jar, gently stirring things around. Put in fridge to chill. I never was a pickled eggs fan, but these are pretty good. Enjoy!

I grew up with a collection of pickled items sitting on top of my grandma's refrigerator (or in the "cooler" on the farm. Pigs feet, various veggies, & EGGS! Flavors varied from year to year, but it was how we rounded our meals, especially in the busy summer months when working was more critical than cooking. And the idea of "waste nothing", is easily upheld when you embrace old time pickling. I love pickled eggs! I like a spiced pickled egg (cloves & "warm" spices), some with fresh herbs from the garden, or just plain garlic. I prefer ACV over white vinegar, but would never turn down any picked egg. Lol Last year we dehydrated a bunch of our jalapeños, so we decided to throw them in with a sweet brine. AMAZING! In truth, there probably isn't a pickled egg i wouldn't like and I'm sure I'll try a million recipes & then forget which one is my favorite. Above the convenience & delicious, nutritious flavors, I think the ability to put up my home grown food with ease & without electricity, is my favorite part.

You can just reuse the pickle liquid from store bought pickles. Pickled beet juice, homemade or store-bought, same. There are many traditional asian spiced ones using soy sauce and such. You can just pickle with onions and whatever herbs you like. Possibilities are endless.

We just put our in 1 part hot sauce, 2 parts white vinegar, 2 parts apple cider vinegar. Or we reuse the juice from dill pickles or pickled beets topped up with apple cider vinegar.

So easy, apple cider vinegar, sugar to taste,canned beet juice pour over peeled hard boiled eggs in a mason jar,let sit a few days or week with the lid on, Enjoy 👍.

They are better if you have enough beet juice to impart the beet flavor into the egg. Better than the store eggs that are just pink.

Yeah, as long as they are unwashed they should last a few weeks. Also it's easy to tell if an egg has gone off because it will smell like sulphur. 😅

@@thomas316 you can tell if they're going off before they stink by "floating" them in water. The older the egg, the more air is in the egg thus the closer to "going off"

As a recent chicken farmer, I have learned that unwashed eggs do quite well when stored in a cool place. I bought several dozen last fall and frozen them or pickled them until my chickens arrived and started to produce...then they all came at once!!

As a young boy living in the country, the country stores always had a jar of pickled eggs and pickled bologna setting out on the counter. I never heard of anyone getting sick or dying.

Pickled eggs help with hangovers by helping you rehydrate. The salt helps replace electrolytes and the vinegar made back then also had more minerals and other things that are removed in distillation. I’ve heard stories about field workers eating a few picked eggs during the summer to help stay hydrated

1 cup of homemade fermented jalapeno and garlic hot sauce (or whatever your favorite hot sauce is), 2 cups ACV, 1 cup White Dist. Vinegar, 3 T Pickling spice, 1/4 c kosher salt, no sugar... 7 serrano peppers sliced in half. I just made this one and it was such a hit with everyone I had to share with you... also, I pickled hot dogs and bologna in it as well.. and I can't keep them on the shelf. My adult children are stopping by just to steal the eggs and wieners. (but I don't really mind)

Years ago I owned a neighborhood bar in Wisconsin, we had pickled everything you could think of (YUCK) I never got into the stuff but the old timers that I grew up knowing when I was a kid loved the stuff so I kept them. I make my own vinegar and when the time comes that I have to preserve things that way I will, but until then YUCK! The pickled turkey gizzards really grossed me out, they were greenish looking, also the best seller. I lime my fresh eggs for preservation and have a big stock of lime ,YAY!

How do you make your own white vinegar? Ive made apple cider vinegar and rasin and cherry vinegar. Its great for cooking.

Wait. You don't even can them? I saw a lady that does 15 minutes in a water bath. Now that I think about it, I wonder if processing them maybe just helps the flavor penetrate faster. I wish I'd seen this video before I left all my eggs in Texas to move. I'm kinda sad now. BUT, I shall now pickle eggs forever and just leave them on the counter. I'm so excited.

As an Englishman we pickle stacks of stuff from eggs to onions cabbage in the traditional UK and European way 100% malt or white wine vinegar or even apple cider vinegar there is no need to refrigerate

You are a great father for teaching your children "If you don't work, you don't eat. My children are more responsible than some adults. When I was young girl in my village, everyone have a job. My job was to take care of the ducks and collect the eggs because that was one of only ways we have food on the table. My favorite pickled eggs would be Tea Eggs, but I also like the taste of the pickled beet eggs many in the West make them. And just as you stated, if you only use vinegar with no added water and don't damage the egg before putting it in jar for pickling they will be good. My grandmother always make sure I understand don't damage the egg for that reason. So I am sorry for those who choose to hate you for something they don't understand. what does it take like? We put pickle juice in our deviled eggs so I can see where pickled deviled eggs might be good...I've never eaten a pickled egg, ever... :)

@@praiseYAHalways It adds a lovely layer of flavor. I have hot peppers in my brine so I get a cool spicy punch mixed with the deviled yoke. I'd take it easy on the pickle in the yoke. It will mask the egg flavor. And you don't wanna do that.

I had to laugh when I saw the title to your video. Just this morning my jar full of pickled eggs and beets broke in the fridge. Wow what a mess. No more putting them in the fridge lol

Does anyone remember pickled pigs feet ? Not my favorite . Then the pickles ham Hawks .? Nastyer . Pickled eggs were always great with a can of cold coke and a bag potatoe chips . Seemed that was on the menu at pops office every day growing up . I sure miss that bar . I miss him even more .

I add Vienna Sausages too my pickled eggs as well as 'spicy brand' sliced spam and food coloring for organizing the different flavored jars. (don't knock it til you try it)

When I was young, our family had a small flock of sheep. About 65 head at the peak. We would ask Dad what's for dinner and he always replied, "Ram, lamb, sheep or mutton!" Then my brother and I would laugh ourselves silly. I don't miss it though. Dad's full time job was a ranch hand on a much larger sheep ranch. So, not only did we work on all of our own sheep, we helped Dad at his job too. It was an enormous amount of work. Tagging and shearing season doubly so. I will spare the uninitiated the gory details. Let it suffice to say, that's precisely why I went into electronics. :)

Two things, we have pickled chicken eggs, but we normally use our quail eggs. Our recipe came from Living Traditions Homestead on KZbin. We have changed it quite a bit so here goes; 1/2 gallon canning jar with plastic lid 5 garlic cloves 2 tsp black peppercorns 2 tsp mustard seed 2 sliced banana peppers 2 stalks of fresh dill 1 1/3 cup of water 1 cup white vinegar 1/2 cup apple cider vinegar 1 1/3 Tbsp salt Mix water, vinegar and salt until salt is dissolved Layer eggs, garlic, peppercorns, mustard seed, dill (about four layers) Pour the liquid mixture (salt, water, and vinegar) over the eggs making certain to cover the eggs. We let it sit for a week before eating them. I like the quail eggs because they are bite size / snack size Second and unrelated, love all of the books you have recommended on the channel especially Unintended Consequences.

Vinegar itself does help with a hangover, and you also have the nutrient chromium coming out of the eggs, which also helps with the hangover

I grew up with a bar in the neighborhood. My buddies grandparents owned it. But there was pickled eggs, hot sausage, pigs feet. And twice a year they would do a fish fry. Which also served whole hog cooked underground for a couple of days prior to the fish fry. But everyone brought something from the past winters hunting. BBQ racoon you name it someone brought it. Started out to be a weekend family get together at the tavern. Fond memories of that tavern.

I love pickled eggs! My aunts recipe is my favorite she adds a jar of beets to an old empty pickle jar cuts up half an onion adds a 1/4th cup of sugar eggs then 3/4th of the jar is filled with vinegar and topped off with water and put in the fridge! So yummy! But I would like to try some spicy ones I need to look for some recipes.

I love pickled eggs. One of my favorite recipe is using basalmic vinegar with freshly added rosemary, onions and garlic.

Pickled eggs have always been a favorite of mine! It's probably the best way to eat boiled eggs. When my Grandma and Grandpa would empty out a gallon of pickles, she would boil eggs and put them in the pickle juice. She would keep them in the fridge, but I think it was mainly because they liked to eat them cold.🤷‍♀️ I put boiled eggs in leftover pickle juice or pickled beet juice ever once in a while now.

My favorite is the way granny done it and that is put your hard boiled, shelled, eggs in pickled beets. They taste great and are pretty. Canning salt is plain salt with no iodine. God Bless.

I have made a few recipes for pickled eggs. My favorite so far is jalapeno, garlic and red onion for my little quail eggs. So delicious. One thing I have learned is to add way more spices that all the online recipes. When i started doing that my eggs went from Meh to awesome. I do put mine in the fridge but they are a mixture of vinegar and water. I will try one with straight vinegar. I always need more room in the fridge. Thanks for the great video. To me this is the best way to preserve eggs.😊😊

I had my two boys adding and subtracting positive and negative numbers-starting at 7 and 9 years old. After spending about an hour explaining the number line and what negative numbers were, I’d simply call out a math problem while cooking, watching TV, etc (“What’s 6 minus a negative 2” for example) and they’d state the answer. I did the same for the Periodic Table of Elements, History, Geography, spelling, etc. I didn’t homeschool them-I was Active Duty Air Force at the time I got sole custody of them at 7 and 9 years old-but I did invest a lot of time and effort augmenting their public school education in the evenings. They both graduated as Valedictorians of their high school class of over 300 students. My youngest made straight “A’s” from the time they started giving letter grades (2nd grade I think) until his 3rd year in college. He never had even a B on his report card. I also gave them reading assignments during their summer breaks. Usually one book a month and always American literary classics. Start early, make it fun, and be consistent.

That's a great way to teach the kids and they get to make money. I would have liked to have that opportunity as a kid. The eggs are in vinegar they will ne fine. Mustard and ketchup also have vinegar and are not refrigerated. I have never tried a picked egg, maybe I should.

We put some of ours in Pickled Jalapeno pepper brine with added apple cider vinegar. Our BIGGEST problem is waiting until they are fully pickled! LOL

I bought pickled quail eggs from a store in Windthorst, Tx. They had rows and rows of them but they probably had canned them?? They were in the glass canning jars.

7 Eleven has Big giant glass barrels sitting on their counter, full of pickled eggs. Every time I go in there for something there the eggs would go down a little bit more and yes they were not refrigerated.

If you go into old country stores, they're just in jars or even big barrels. I make a lot of pickled eggs. I sometimes put them in the fridge but not always

My first adventure into a local tavern, I was eight and was with my Pap (Mom was upset 😂). Every guy in there worked in the steel mill. My lunch was sardines on crackers, raw oysters, and purple pickled eggs (added beet juice). Years later I had those in my pub. The real purpose is to keep you from leaving because your hungry. 😂😂😂 Only cure for a hangover... don't get drunk 😮😂😂😂

Totally Agree, I do not water down the vinegar either. My favorite is half eggs and half kielbasa sausage chunks with a few onions slices, traditional pickling spices plus some red pepper flakes. Made 6 quarts yesterday, they are sitting in my pantry soaking it all in. Cannot wait to try them.

Back when I started drinking in pubs late 80’s eggs were free on the bar, but not for hangovers, it was because you’d dip them in the salt, and of course with a mouth full of salty egg… drink more! That’s what the publican told me. But maybe that’s an Aussie thing. Thanks for the video, I’m off to pickle some eggs and the definitely WONT be going in the fridge. I’ll check out some more of your vids when I’m done this batch of eggs. Cheers mate.

ACV pickled eggs and little smokies sausages with pickling spice, turmeric, smoked paprika. Never put pickled eggs in frig in my life , I'm 73 nether did my Mom and Dad. Dad was a commercial fisherman out of Monterey Bay California for 50 years we , also ate a lot of pickled and smoked salmon and tuna.

Love pickled eggs! This year I used a pre-made mix. Would love to find a brine recipe that works well. I once had someone give me homemade picked watermelon, never ate anything else from him after that.
