Excellent video. And I can testify that it is all too easy to over-water the pastry when making it in a bowl. I do that every time, so now I'm going to follow your advice and turn it out onto my work surface to bring it all together. Thank you for a very clear and helpful demonstration. Kindest regards.

This is for just one layer; double it for covered pie. 1.25 cups flour 115 grams cold butter 1/4 cup ice water

Hands are too warm and will melt the butter. This way, the cold butter chunks make flaky layers. If you don't have this tool you can use forks, but it takes even longer.
