Get ready for the Kentucky Derby and Cinco De Mayo with these delicious Pimento Cheese Tacos. Whether you’re having a party or want to experiment with flavors, this taco recipe is for you! Trust us, this pimento cheese spread is addicting and can be used as a dip if you don’t want to make tacos. The trick to making this pimento cheese dip is to shred a block of cheddar cheese to make the dip extra smooth.
Pimento Cheese Spread:
2 C shredded sharp cheddar cheese
8 OZ cream cheese, softened
4 T salted butter, softened
2 T chopped pecans (optional)
1 T garlic and parsley seasoning salt
¼ t cayenne pepper
1 T grated sweet onion
8 OZ jar diced pimento, drained
2 t ground black pepper
2 t hot sauce
Pimento Tacos:
16 OZ Pre 92% Lean Ground Beef
1 t high heat cooking oil
Packet favorite taco seasoning or make ours
1 box mini or regular hard taco shells
Your favorite taco garnishes
Instructions:
1. Make pimento cheese spread: Place all ingredients in a food processor and blend until well combined. Spoon into a crock or jar, cover and set aside.
2. Heat a sauté an over medium heat and add the oil. Brown the beef, breaking it up as you cook, until cooked through, about 8 minutes.
3. Lower the heat to medium low and stir in 1 C of the pimento cheese, stirring to blend. You can add a tablespoon of water or cooking stock if the mixture seems too thick.
4. Simmer the beef and cheese mixture for 5 minutes then assemble the tacos and serve with taco toppings of your choice.
5. Alternatively, you can serve the beef and cheese mix as you would a queso dip with tortilla chips.
