Slotdogs with Homemade Chili and Pimiento Cheese!

My wife's favorite meal that I make is THIS! We love the slotdog. My wife is crazy about my homemade hot dog chili and my pimiento cheese. So I just combine the two to make our traditional Valentine's day dinner!

Chili:
1 pound lean ground beef
1 medium onion, finely chopped
12 oz beer of your choice
1 1/4 cup ketchup
1/3 cup yellow mustard
1 T chili powder
2 T cider vinegar
1 T salt
1 T sugar
1 tsp garlic powder
Brown the ground beef and onions. Do not drain fat. Add beer and crumble ground beef as much as possible. Simmer for 15 minutes. Add remaining ingredients. Simmer uncovered until you like the consistency. Cover and simmer for one additional hour. Use immediate or freeze in airtight containers for future use.
Pimiento Cheese
8oz extra sharp cheddar cheese
Mayo
1 tsp Worcestershire sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
small jar diced pimientos, drained
Combine the cheese and mayo in a mixing bowl. Add mayo until you are happy with the consistency. Add the rest of the ingredients and mix thoroughly. You may run this through a food processor if you want a creamier texture. Refrigerate and keep in an air-tight container for up to 10 days.
