It may be easy but it really has a lot of visual impact. The meringues are adorable made with that tip and the added blue icing and popping sugar really made a stand out embellishment and you know I always love gold.

Hi Rosie, always enjoy watching and trying to learn off your great tutorials. I've always had trouble mastering the decorating part of cakes. Ganache drips will be the death of me! Just a question if you could please help me out, when is the best time to do the drip part onto the cake? I'm not sure if you're meant to let the ganache cool or put it onto the cake as soon as you're done mixing the ganache. Cheers :)

You should let it cool a bit or it will melt the buttercream. I don't remember how much time it takes, but I would say about 10, 15 minutes maybe ? Depends of where you're living obviously. If you've put your cake in the freezer, then have the ganache at skin temperature, like milf for babies. It should be warm enought to drip but not to much :)

The frigde will do it but have it as cold as you can and let it longer. about 1h or more depending on the size of your cake. It's ready when the surface is hard and don't have the imprint of your finger on it.

Hi Tanya, normally it would take about 400 grams butter, 800 grams icing sugar, 1 teaspoon vanilla and 2 to 3 talespoons miilk. But I always do a recipe for 500 grams butter 1kg icing sugar, its always nicer to have extra than it is to have to remake the buttercream :)

You know, I've tried doing your vainilla sponge cake in a 4" pan and it didn't turned out well... the middle would never bake and when it does, it goes down after a few minutes. It takes like an hour to bake in low heat... can you help me?! or how do you do the sponges for your mini cakes?

Hi Maria Paula Ñañez, it sounds like your oven temperature is too low. Is this for the butter based cakes? I bake mine at 180 degrees Celsius, which I am pretty sure is 350 degrees Farenelheight.

Maria Paula Ñañez yes, it can be used for cupcakes as well. In a 4 inch, mine take about 40 to 50 minutes. Have you put an oven thermometer is your oven to check its accurancy? This might help. It might be your oven needs to be high by a few degrees.

Hi Rabia, yes you can :) it might look like there are teeny tiny little holes if you look closely though (thats what I find when painting directly onto buttercream).

You can but the water won't evaporate like alcohol does which is why alcohol is used. If you absolutely can't use alcohol, I'd recommend using lemon juice or clear vanilla essence
