My wife bought me a Pit Barrel Smoker for father's day gift, I got it almost a week ago, and experimented with it by smoking a tri-tip, a whole fryer and some ribs they all came out well, or at least better than expected. Now that I've watched the videos on this channel, my smoking experience increased and I've now been asked to smoke some meats for our friends. I'm gonna try out this Huli-Huli chicken recipe and hope I can pull off another culinary surprise. Big props to Smokey Ribs and those wonderful recipes, maybe with a little more experience, I'll be able to develop a few recipies of my own, Thanks again Smokey Ribs, my wife even thinks I can actually cook.

i have watched this video at least a dozen times! i cooked it tonight on my kammado and HOLY COW my new favorite chicken! i modified the cook slightly i used legs, thighs and breast individually then i started first low and slow indirectly cooking it at 250 for about a hour then i pulled the chicken and the smoke stone and ramped grill up to 350 and finished it off with two coatings of the sauce and my lord. i had my parents over for dinner and to try my dads first comment when he saw the grill " are you feeding a army" after dinner we put 3 pieces of chicken in the fridge!! it was a little spicy for my mom next time i think i will make some as you did and make a separate rub minus the cayenne for the heat intolerant. Love you videos keep up the good work.

Russ, I made this tonight and it was probably the best chicken I have ever had. using my PBC it took just over 2 hrs from beginning to end. juicy, tender, and flavors that are out of this world. I wish I could post a pic to show you how awesome it looked.

Got the pit barrel on Tues and did Huli Huli on Sat. Followed your instructions to the "T". Without a doubt the best barbqued/smoked chicken I have ever tasted and I have done a ton of Virginia chicken in the past 43 years! As a side dish I made pineapple rice. Fantastic partners! Great video. One of the best videos on KZbin when it cones to using a Pit Barrel Cooker, with the lighting of the coals, waiting 20 minutes to come to temp etc. Gonna make chicken with a white Alabama bbq sauce today on my PBC but I guarantee I'll be trying this out next. Great job....thanks!

Looks great Rus, can't wait to try it. I lived in Hawaii for 6 years and really enjoyed the huli huli chicken from the road side rotisserie grills. You know they were near when you started smelling the Kiawe (pronounced "Kee-ah-vay") smoke. It sure was hot in south MS last weekend, I was visiting family in Bay St Louis. Keep up the great work.

I saw a Youtbe video of Mike's Huli Huli chicken on Oahu and wanted to try it. We rented a van in Oahu on a trip a few months later and just followed the coast. I was so surprised when we rounded a corner after a couple hours of driving and there was his yellow truck and trailer. He explained the process and I got a couple of pics with him by his truck doing the hangloose sign. I bought two chickens and it was awesome. Of course I did not ask his recipe, but now I know from you just about what it is. Thanks Russ!! A small tip from Mike is that he likes to use small chickens. Insider info. Am pretty sure you don't mind that. I like to learn and that is why is why I am a subscriber.

I decided to try this after reading all the rave reviews & I'm so glad I did! I didn't have access to a grill in the wee hours 😅 of the morning, so I pan seared instead. I made a few adjustments to the spice rub - I used smoked paprika, smoked sea salt, ground crushed red pepper (I ran out of cayenne), 1/2 tsp ground grains of paradise, which has a very close flavor profile to that of black pepper. I kind of felt guilty after that because I wasn't sticking close to the recipe, so I got out my coffee grinder and ground some peppercorns! 😂 I also added 1 tsp of ground bay leaf salt (made it myself ), as I noticed some other recipes called for brining, using salt, sugar & bay leaf. I also dialed back on the ground pepper, I can handle the heat, but my kids unfortunately, cant! The sauce I followed exactly, except for the addition of about 1/2 cup of brown sugar to balance the salt, & I think I'll use reduce sodium soy sauce next time. I LOVED IT! The chicken was tender & flavorful.

Rus, I made this last night and I have to say it was spot on delicious!! My heat got a little high on my Weber after basting but other than that it was very good. For tonight I made a couple quesadilla's with the left over chicken and Huli Huli sauce, they were excellent!

I just got a PBC and this was the first thing I made. It came out absolutely fantastic. The chicken took quite a bit longer (like 4+ hours) to cook but I had my PBC running at like ~260-270 the majority of the time.

+Rehdman6444 Thank you! The cool thing about the Pit Barrel Cooker, is that you can't adjust the heat. Follow their guidelines on how to stoke the fire box with charcoal, and how to light it. Hang the meat, put on the lid, and go by time not temperature. The PBC website has a lot of videos on just how long to cook different meats. Hope you give this one a try, it is really good! +BladeSkier1974 Chicken absorbs smoke really easy, so I put just enough at the beginning to give it about 2 hours of smoke which is plenty. Longer than that, then it can become over powering. I always treat smoke like any other seasoning.

I saw huli huli in Cook's Country awhile back but never tried it. You are going to get me in trouble...I can't hide a PBC from my wife and she is going to complain until she eats the chicken. You definitely earned a sub!

I can't wait to try this recipe. Question; was your cook time slightly over two hours? Cook for 1 1/2 hours, baste than cook another 15, baste again and cook for another 20-25 minutes? Thank you

+M Russell The recipe and instructions are in the description box below the video. Just click on "Show More" I would still use a instant read thermometer when you believe they are completely cooked to verify the internal temp is at minimum 165F

Such a disappointment this Pit Barrel isn't sold in the UK, I'm convinced there's a huge market for it! Keep up the great videos!

I did that very thing yesterday fella, the Vice President got back to me and said they're considering expansion but no current plans. :( Bad times! So difficult to get a good BBQ over here!

drunkphatandlazy You can make this recipe in any grill, but you will have to flip them from time to time unlike with the PBC because the chicken hangs and it's cooking all sides evenly at the same time

Kim Mozingo Thanks so much Kim! You can do this on a gas grill, but you may want to put a little smoke box (Lowes or Home Depot) over the heat to supply the mesquite smoke for the ultimate flavor. I purchased one a few weeks ago, made out of cast iron. Just a little smoke box, that you can also add water to for humidity to keep your chicken moist.

What temp does that pit barrel cooker you have there run? I will use a WSM and I notice you never mention the cooking temp.Chicken looks great! Cant wait to make my own.

+YoMoma777 Runs around 275 and I've never seen it hit over 325. I didn't mention the temp because it can't be adjusted. It is what it is, and it works as long as you load and light the charcoal as recommended which is sort of a minion style. Burning from the top down

Rus, great looking yard bird. That Pit Barrel Cooker seems to be a beast for smoking food. Great video, wonder how that Huli Huli sauce would taste on some pork, May have to try that. Outstanding cook my friend.

I still haven't gotten a PBC, and I don't know why! I've heard it's a rib machine, a chicken machine, and just maybe a brisket slayer (still looking for more brisket cooks). Such a simple cooking approach!

how is the skin is it crispy or rubbery like sometimes happens when you smoke chicken at a lower temp?

Skin was not rubbery at all, and the bite is great on it. Not really crispy because of the sauce. I'm pretty certain you will enjoy it

A PBC typically runs between 275 to 325 F, but in my experience it seems to run closer to the 275.

***** You could use any charcoal grill, with mesquite wood for smoke, but you will have to keep turning it from one side to the other every so often, unlike the Pit Barrel Cooker, where it cooks all sides evenly at the same time by hanging
