I have seen many video clips of geese cooking , but I have never seen like your skill in cooking geese. The final color of the goose after cooking is great. In the videos I saw earlier, I was not satisfied with the goose skin color !!!! Bravoooo & God bless you .

Best part of the video was those goose-fat fried taters! Damn those looked good! Thanks for the unusual recipe Chef goose isn't a popular item here in the States. My Granny kept a flock and would occasionally whack one for Sunday dinner. I ate with great joy because those geese were mean as hell and would chase me all over her yard!

Morrison Hulshof Thanks Morrison. She was a 4' 10" Polish Babushka who lived to be 90 and by herself most of her later life. A very sweet lady but totally self-sufficient. Raised rabbits, chickens and geese, picked wild mushrooms, gathered nuts and fished in the family pond. Not too many like her any more!

Roel. Make sauce with the liver. Fry the liver till crispy outside and put in a blender with few slices fresh/canned pineapple, 2 red chillis, 1 medium onion, 2 cloves garlic and pinky size ginger and squeeze a lime + salt. Voila.

@@PITMASTERX This was perhaps the first Goose video of any sort I've seen pop up on any of the BBQ and such channels I'm subscribed to in all these many months now---they are an extremely expensive bird around here ($69 roughly), but your video here does a good job starting to showcase the value even if it is an uphill fight vs perhaps an entire chicken/turkey/duck combined.

You could use that stuff from the inside of the goose and them wings and make a fantastic gravy to go over mashed taters just like you would if you were using the insides of a chicken or a turkey for Thanksgiving to make giblet gravy

Hi Roel - this looks fabulous and so I tried it last night with less success than you I am afraid! Firstly I had to get two ducks because they were small, then I may have had the rotisserie at too low a heat - because the skin did not crisp up. Lastly the basting sauce was not thick like yours despite reducing it by three quarters. Any further tips? What temp did you have the grill at and how long did it take you please? Thanks and keep up the great work - I have had plenty of success with other vids you have produced.
