I am very glad that you give recipes for your rub. It is a very different price to do you own rub. I pay for example 10 euro for 1 kilo of whole black pepper here in Europe,from Spain, garlic powder 1 kilo 6 euro.....yellow mustard powder 10 euro. Many just show a small tin of spices that is 80% salt. that makes it very expensive

I like the reverse deep fry method. Smoke em then batter in corn starch and deep fry. So good.

Would suggest you try this with a “vortex”. It’s a must for higher temps, and as you know, chicken skin is a big challenge when it comes to smoking. I know… More Cooking Stuff. Anyways, it’s cheap, effective and a must have accessory. Once you’ve tried it, it will become a permanent implement for sure. Try it. Cheers!!!

All of those were flats which are equivalent to a forearm but you indicated you prefer mini drumsticks which is the same as bicep. So which do you prefer? Thanks

I've never heard of 3-4 of those spices for the rub... Do they have more common English translations? Or was that English? LOL

Most of those are the correct English names but some may be alternatives... Kurkuma (amongst other languages, also the scientific, 'Latinized' name) is better known as Tumeric in the English speaking world and Piment(a/o) is also known as Allspice. The others are the correct English terms. Paprika, Coriander, Mustard, White Pepper, Ginger, Cumin, Nutmeg, Fennel (the seeds are usually used as spice while the plant can be eaten as vegetable), Fenugreek (in the Netherlands popular as a herb added to hard Dutch cheese) and Lovage herb (in the Netherlands also known as Lavas or 'Maggi' herb).

Actually, moisture attracts smoke, not dryness. Love your vids brother!!

Air drying brined meat creates pellicle (read: stickiness) that smoke readily adheres to. Also, drying the wings will result in a crispy skin. They're brined, so you're not drying the meat out - just adding stickiness and crispiness to the skin.

@g54b95 That works for cold smoking. Little air flow type situations. Water holds and keeps smoke better than anything. It's why a lot of us use a water pan.

Actually, you’re wrong brother. Moisture on the meat evaporates off while cooking. Taking the smoke flavor with it. Gotta have dry meat to absorb smoke. It only matters on things that smoke for a couple hours. Long smokes it really doesn’t matter.

How were those chicken wings cut? It looks like the actual wing joint was cut off so you didn't have the cartilage and the other inedible parts at the end. Is that correct? Is there a special name for that technique?

There is an error in the rub. Two tablespoons of salt will only give you 30g and not 50g. So, better use 3 tablespoons ;-)

Overkill. Also I would have grilled the Pineapple. Its oh so tasty when you do this. Love the grill marks on it, too.

What the hell is kurkuma powder, piment powder, fenegreek powder and lovage herbs? Ive been cooking for quite a while and never heard of any of them.

Obviously not long enough :-) Kurkuma = Turmeric Piment = all spice with some (Jamaican) pepper and cloves Fenegriek = a butterfly plant found in the Mediterranean

Great cooking method! You lost me when you added the cumin. The worst seasoning ever. People who like cumin don’t have taste buds. No one ever has said” Needs more cumin”. But, love the crispy cooking method and the size of the wings. Good video!
