Made this cake last night and absolutely LOVED it!!!! Pineapple upside down cake has been a favorite of mine since childhood. Jill, you totally nailed it! You won't even miss the butter or brown sugar. The juice reduction was so sweet and actually tasted buttery! I made a couple modifications: 1. I added about 1 tbsp of tapioca flour (starch) to the pineapple juice reduction (mix with 1/4 c ice water to make a slurry, then stir into the juice). Tapioca works better than arrowroot with acidic sauces. Cornstarch would have been another good option. 2. I added about 1 tsp of cardamom to the batter--because I love the pineapple/cardamom combination. I used a fresh pineapple, rather than canned, and skipped the raspberries (because I didn't have any). When I tasted the batter, I was worried that the dates didn't make it sweet enough, so I actually added a couple tablespoons of coconut sugar. In the end, I wish I hadn't done that, because the reduced pineapple juice provided plenty of sweetness. Will totally make this again!!! I also bought the cookbook.

Jill, I purchased your cookbook after trying a few of your recipes, and appreciate that they are SOS free, and results are delicious. Your banana bread with sesame seeds sprinkled on top are in my oven now, and I bake it in a square cake pan and they come out as bars that our family calls the sesame seed bars. The hummus recipe is very different from the typical hummus recipe, and yet it’s now our favorite way of making hummus with your addition of raisins and NOOCH. I have lots of vegan cookbooks but quite frankly many use oils and high in sodium and sugar and I’m trying to get away from those ingredients when my husband was recently diagnosed with an elevated blood pressure…. To all you readers…get Jill’s book! The hummingbird cake is one of my favorites!! I could go on and on….Just get that book and buy it for friends who are wondering what people who are SOS Vegans actually eat…. Thank you Jill….

ONE ☝️ WORD 💕 YUM” I can’t believe how good this cake is and sooo healthy! I honestly had my doubts lol when I made mine and the top was like a paste I’m like yah I don’t know lmao 🤣 then the pineapple was a fresh one and I juiced it to make the sauce it took FOREVER… remind you I made that last silly me … i think because you used pinapple juice and not juiced it … it’s faster ! But I’m definitely doing this for all over again for Easter 🐣!!!! My kids LOVED LOVED it! And I’m not use to cooking with out my coconut sugar but I bought a bulk of dates couple months ago I even have some frozen ! I’m sooooo happy I can now use as an alternative! Hi I'm still making this every other week and wanted to share how I switch it up sometimes: I have been sprinkling a generous amount of coconut flakes over bottom layer of pineapples adding lime juice into cake batter with almond milk in place of water and then.....I have been adding a whole round of pineapple slices to top with more coconut flakes!!!! I know it's not upside down anymore hahaha its double decker and sooo good . Thank you again

Hey Jill, I made your Apple Caramel Cake with Pineapple pieces and it smells so good! I will now make this Pineapple Upside down when I will enough Juice in stock! But I have a question about Oats and Oat flour...for next time..because cake seems dense! (I post here because comments are not availaible below Apple Caramel Cake video...) For me 1cup of Oats is 100g with my measuring cup...and almost same when grounded into flour.. So to be sure how many grams you have with 2 Cups of Oats flour after (the printed recipe says 240g...but need to be sure as too much oats could be an issue.. Then can I use Coconut flour or more Almond flour for less Oats flour? (Same for this Pineapple Cake?) Many thanks Henri 😉

I would go by the cup measurement. That is what I use. The metric measurements are automatically calculated by the online recipe maker. Coconut flour tends to make baked goods a little dry, I find so I would use almond flour.

For example for me 1 Cup of Dates (packed) is 200g..do you use packed Dates for 1 Cup? I asked for Coconut flour because you said It can work for Apple Pie (but it was for crust...) and I love Coconut Flavor with Pineapple works well together! I have beautiful with big round shape Organic frozen Cherries so can I use them for your Pineapple Cake?

Another reason to be afraid of cherries is the stones. Even if you buy them stoneless, a few always still have their stones because the stone remover at the factory was stoned on the day and missed them. One of my buddies repairs teeth and he is a big fan of cherry stones.

To further add to your story about the maraschino cherries… Many many of the brands of cherries color the cherries back to a red color by using something called “cochineal” beetle extract and it’s literally GROUND UP BEETLE BUGS, and they use that to color them. There are some brands that don’t do this but many brands do. If the ingredient says “carmine” (and also called “cochineal”, “crimson lake”, and “natural red 4”), it’s not vegan anyway due to ground up bugs added to the recipe. Many yogurts and candies, and anything that has red or purple, is subject to having this ingredient in it, by the way. Check the labels!

Yes, the "natural red dye" names @Mary Davidson listed above as well as "confectioner's glaze" are made from beetles and aren't vegan. You have to check candy ingredients carefully. 😐
