My Mom (RIP) was a Creole Chef from "Nawlins." The way you cooked your gumbo was almost to the letter the way she (and I) cooked hers. The only difference is that she added seafood stock to the chicken broth. I also add crawfish tails when I'm showing off my culinary skills for family and friends in Baton Rouge. Thank you for keeping your gumbo authentic. I've seen people put ham, turkey necks and other (IMO) non-traditional meats in their creations and call it gumbo. The tradition and culture of gumbo is important to me and you uphold both to the letter. I am now a subscriber.

well wait a minute girl, did you not trip when ya see him drop the freeze dried Koren shrimps in there lol !!! Question when you make the seafood gumbo broth do you boil shrimp/crawfish/crab shells etc. or what you do to make the broth other than chicken broth for the seafood gumbo?

Another lifetime ago, I found myself stuck in New Orleans. Had to earn money to get back home. Got a job in a mom and pop eatery. I went to cooking school and thought I knew enough, but I was humbly wrong. I ended up staying for 2 yrs and I loved every bit of the food and culture. I'll eat me some gumbo.

This looks like my late stepfather's gumbo that he used to serve at our family's restaurant when I was a kid, except he also put crab claws in his. I sometimes helped with pulling the meat off the chicken, but I was too young to remember the recipe. Thanks for sharing this. I don't like okra any other way, because of the texture, but it tastes great in gumbo for some reason.

For those that aren't big on boiled okra...a New Orleans trick my Grandmother taught me is to stir in fried okra right before you serve the gumbo.

Man, when it comes to making food for mystery, I'm not putting something in my pot that I don't like. Is it still gumbo without okra? He'll yes it is. Is chili no longer chili if you put beans in the pot? Come on now, people go too far with that craziness. I LOVE fried okra but I don't care for it in my gumbo so I don't put it in there. I like to do what @rickdavis3593 tip of frying up the okra separate and then put it in a bowl on the table to be added by my guests if they so choose. Same with the filé too.

I just made this awesome gumbo recipe and it came out perfectly. It is fun for me to share this great cuisine with my family and friends in New York. I'm from Texas and that's how I cook mine too. Instead of the dried shrimp I put in seafood stock but its basically the same thing and I add tomatoes. Not many ppl know the okra secret either so that was awesome to see. Great looking gumbo

Been trying to find the Gumbo my mother would cook on Thanksgiving and Christmas. She would develop a very dark roux. It is a pleasure seeing an authentic filet gumbo! Even more of a pleasure eating filet Gumbo!

Yes sir now that's a gumbo I like ,nice and juicy with okra , and you can use invitations lobster in it , like I used , serve over white rice , freeze the left over for another day , most time it taste much better after you freeze it , a great meal for dinner on a cold night , great video , you explained it well, great job.

My gumbo went sideways. Roux base butter n bacon grease. Whos idea? Anyway i dont know what specific seasoning is responsible for gumbo taste. I call my dish yumbo and its great. My garlic sausage n lump crab were excellent. Ill try again🧑🏾🍳

I've decided I am going to be brave enough to attempt to make Gumbo for the very FIRST time. This looks like a great recipe that's similar to my own, though I've begun to lean toward doing just chicken and sausage. I guess I like mine a bit soupier since I use over 9 cups of broth; I cook for a few hours uncovered, so it reduces down quite a bit.

Roux is much easier to make in an oven instead of a stove top. I like crab in my gumbo. I also like it to sit overnight after cooking to let all the flavors mingle. "I Will Work For Gumbo!"
