Aahhhh! Excellent, my dear sir! I seem to recall that some 20-25 years ago I was invited to a gumbo party by a 55-60 year old white gentleman from Louisiana or some thereabouts, with some NASA engineers and some Russian guys and astronauts. As I recall, we'd been having an interesting talk while he was working on his roux -- very dark, and it took him about an hour and half to get it to that color! The gumbo was beyond reproach --- the best I've ever had! Best wishes and greetings from Houston TX! 🎉😎

I ran across this video in my suggested list. I can tell this is going to be amazing! The snapper and king crab legs make it absolutely next level! Thank you for speaking so clearly and explaining the “why” of what you are doing. Reminds of the few times I spent in my mother’s kitchen when she did exactly that(cooking was largely seen as a “girly” thing so those were secret times I got to spend just me and mom).

Dang, I loved this video, great speed and content. Learned some new tricks (the dried shrimp was a new deal), and going to serve it up tonight for my family holiday party! Living on the Gulf Coast, I've done Seafood Gumbo for years. I like to add additional seafood to the pot, like bay scallops, but this recipe was done so well. My thanks to the Chef!!! :)

I decided I was gonna make gumbo a week ago for the next weekend football tailgate against LSU. I watched about 3 KZbin video recipes as I had always wanted to make gumbo, but never had. I decided to choose this video/recipe. Spent an entire day traveling all over town to try to find the ingredients I needed and didn't have on hand already. I wanted to try to buy the same exact seasonings/ingredients as possible to turn out this exact recipe. I prepped the night before cutting/chopping all produce up. Following morning, I started. Made this exact dish/recipe following along with the video and pausing it in-between to catchup while cooking. The only thing I substituted was chicken for the red snapper. Everything else as listed/mentioned here I included. The end results was a massive hit with the Blue Crew (about 30 plus group tailgaters). I just kept getting compliments all day into the night! I had a few skeptical because the don't like or eat seafood, but they said it smelled so good they couldn't help not trying it! Definitely will make again the same and/or with some slight variations like maybe crawfish instead of another protein? Can't go wrong with anyway you make it. Like making chili, there's 1000 different ways. Was very proud of myself for how well it turned out and tasted. Especially the roux being my first time. Didn't leave that Dutch oven one time while making. Stirred constantly for probably 45-50 minutes. Not to mention I have now watched this video probably around 25 times. Awesome recipe, video, chef! Thanks for taking the time to share!!

Thick Thor cooking your roux in the oven is the best! You take 4 oz vegetable oil and 4 oz flour place in oven on 350° for about an hour and a half. Stir about every 20 minutes and there you have it! I love it because it allows you to prep your other ingredients instead of stirring and standing over the stove.

Our tradition is to have gumbo on Christmas Eve. This will be my recipe for ‘22. The past few years we’ve enjoyed the recipe from the chef at Hotel Monteleone. Your “next level” recipe has more spices and I look forward to preparing and enjoying it. p.s. the oven method for the roux works well and is less time intensive.

Always interesting to see how different folks do their gumbos. I always come away with a new idea. I was a bit surprised to see that you didn't skim off any excess oil (which usually percolates up to the top during the long cooking time). But, I know some folks who stand by the saying "fat is flavor" (as long as it doesn't get greasy I guess). I also tend to brown my andouille more, because of another saying "brown food tastes good."

When I make the roux I make it ahead and use Alton Brown's technique, Heat oven to 350ºF. Put the oil and flour into a 5- to 6-quart cast-iron Dutch oven and whisk together to combine. Place on the middle shelf of the oven, uncovered, and bake for 1 1/2 hours, whisking 2 to 3 times throughout the cooking process. I've done this many times and it works great.

Great idea with frying the Okra and using seafood broth. I can’t wait to try this recipe. My roux has always taken me at least 45 minutes so when you said that you are the first guy I’ve seen on you tube saw 45 minutes. Most people say 15 to 20 minutes and all I can say is that’s not my Roux!!! Yours looks delicious and I too use beer in my gumbo. Looks fantastic!!!

I like everything about this recipe with one exception. I do not use Crisco or any vegetable oil, I use all butter. This is definitely an over the top gumbo with the King crab. I will have to try that. Great video.

I use butter as well but if you're not careful and depending on the dish, it will smoke and burn. I usually add a bit of olive oil with the butter. Gets the butter flavor without the burn.

@@akquicksilver Thank goodness your wife married a good cook. Mine did too. Not bragging...just years of practice. And no...I have not used ghee. Friends I've talked to have complained about inconsistencies in quality...not to mention the cost. I just prefer butter. It's predictable.

Great recipe! I usually use Paul Prudomme's recipe. Most people don't get the roux dark enough. You have better luck with the roux if you make it in a clean pot. Less chance of burning it.

That gumbo looks awesome and I know since my family from both sides have been making gumbo for years during the Christmas and New Years holidays. I would never thought of adding beer as an ingredient, but I’ve heard of some recipes of using white wine. I always look forward to your cooking videos! 😊

Great recipe and presentation, easy to follow and thorough. It did take 40 minutes or so for roux but everything things else was on point. This recipe is considered Cajun because tomatoes are not included, I added tomatoe sauce with mine and flipped it Creole !

OUTSTANDING VIDEO! Why? First your beginning is like the gumbo process, slow, easy, complete. Heck, it’s the most important. Then, the okra. Some people do not add the okra. Your seafood gumbo is el primo because it reminds me of some of the great New Orleans gumbos I have had. Third, your video filming, the easy clear narrative, well a child could follow you chef. I put in a couple of chopped, deveined & deseeded jalapeno peppers with my green peppers. It gives the gumbo an extra kick.

Love this video... But is there an alternative for the okra ? What do you think about adding corn,frozen bag corn.For me tho,I would put a little more shrimp & fish. 👍🔥
