I made gumbo for the first time this weekend. I used this recipe and subbed crab for chicken, turkey andullie for house made crawfish andullie, and used homemade stock. My dad, son, husband, and his friend ate it all within 24 hrs. I was in disbelief. My dad is a gumbo snob. So he’d have know reservations about telling me if this ain’t it. Thank you for putting out recipes us regular folks, with regular kitchens can still throw down with.

I didn’t have beer, celery, Worcestershire, I used a squirt of Braggs Liquid Amino , white onion and for extra seasoning I added Old Bay…. You have taught me so very much. I am a very good, " Old School, " cook. However, you never ever stop learning. There are certain dishes that I am accustomed to in my geographical area in East Texas. AB...thank you for posting this amazing recipe. As an Indian, I had to make sure I didn’t turn this into just another curry 😄. Followed your instructions exactly, however it took almost 2 hours for me to get my roux to a darker colour...my fault, I was too nervous to do it on a slightly higher heat. It got darker, and then I lost my nerve to keep at it and get it to a dark chocolate ( all the time, in my head I could hear you say “ you gotta trust the process” 😂). I couldn’t get my hands on Andouille sausage, so I subbed with Polish Brats instead. Let me just say, this came out fantastic ! My family polished it all off. Definitely making this again.

I knew we would be in good hands when we saw big man in the kitchen- I would trust this man to make a bomb ass seafood gumbo, chicken wings- I would trust this man. To give me legal advice.
