Man, I have a suggestion to you. You can install a filtration system to connect from your accumulator. Therefore, no matter what water you have in your jar will have filtered before pumping to your whatever espresso machine.

How often should Flojet pump be kicking in? I have mine setup with pressurized tank and usually it will toggle on every second shot or near the end of shot.

Depends on the machine and your diaphragm size. Sounds pretty normal

I thought I would get away with refilling my five Gal when it gets down. My five Gal lasts a while because I don't make that much espresso. How long till you feel the water is not fresh anymore? Thinking about switching to 3 gal. But my Caffewerks pickup is designed for 5 Gal. Should I modify it to fit the 3 gal? What do you think?

Clive says with the flojet 5000 you don’t need an accumulator only if your plumbing multiple machines

I saw that one too. But it's not true in my case. Got 1 espresso, and with flowjet alone it can't keep a steady pressure. It ruins the shot. The tank solves it 100%
