Additionally it also gives me many ideas to cook in my kitchen. My good friends gave me your Christmas cookbook which I will use in the very near future. I especially love your tours of the surrounding areas of your home. I remember the days when moje mama would make pasta in Chicago area. No kitchen aide contraption. She manually would knead the dough and I was there to step in whenever she needed muscle. It was like 'tag team' cooking. She also used a rolling pin to thin the dough. It was a labor intensive event. Polish cooking has modernized. I'm now in FL but I still continue the Polish culinary traditions. Smacznego!

Lovely soup. My Polish Mother made our soup a litte differently. Just cook the chicken slowly. The only seasoning was salt and pepper, maybe a few carrot slices. Then add as much cut up cabbage and let it cook. Make your noodles, which never had water added, only eggs, or egg yolks and flour. Her noodles all made by hand and not long ones. Strips stacked and then thinly sliced. Then dried. They were then used. For the soup boiled in water and then the cabbage and broth poured over into your bowls. Now I use my Kitchen Aid stand mixers. I have 2 of them and when I make noodles I do a lot of them, filling up a big dining room table, to dry. I think you should not use salt especially when using attachments as in time could cause them to rust. I used to have my own chickens but because of my age I don't have them any more. I get eggs from my daughter who has several. I am 86 years old. Grandma Sue in central Indiana and Izzi Too

I made the rosol last couple Sundays and let me tell you not only did it add a beautiful fragrance to our home but it was delicious. Both of us work from home 40 hours a week and this was a great simple dish to make. I will say that our old chicken soup recipe was watery and didn't have flavor, so we always added Vegetta. But honestly, we didn't need it when you have the whole chicken body and the addition of leeks, parsnip, etc. Probably healthier since I have to limit salt/MSG. Thank you so much for this recipe and I will be making much more! Krupnik is next!

I would spend weekends at my Babci's house up stairs the rosol was cooking, downstairs she had a separate kitchen in the basement where she would make kaluski noodles. She would roll out the dough, then roll it on itself ,cut it in half and slice thin noodles out of it. My job was to spread all the noodles out on kitchen towels. Still miss those days.

This brings back such good memories of making noodles with my Mom & sisters. Mom mixed the dough by hand and then it was our job to knead more flour into the balls of dough. We used a hand cranked pasta maker and the large sheets of pasta were cut into 1-1/2 inch strips before feeding it thru the thin noodle roller on the pasta maker. We dried the noodles on bedsheets spread over our beds. At the end of the day we gathered them up and stored it, if it was dry enough. If not dry enough, it went back on the bed to dry for another day. I lone your channel!

Great video not only on the chicken broth but I wanted to see how you make your noodles. My grandma always rolled out the dough w a rolling pin and cut the noodles w a knife so that s how I do it.. Polish Chicken Soup in my home was called "Sick Soup". It was typically made when someone fell ill LOL.... Yours is much more complex. Sick Soup is rather salty, with very finely chopped vegetables, boiled chicken pieces and quite a lot of egg noodle. It is not something you would serve commonly but there is nothing like it when you are poorly. The broth is somewhat reminiscent of Japanese Miso in its salty flavor.

Great video. However, the parsley root looks deceptively similar to a parsnip, but parsnips are creamier in color and have a more earthy flavor. Parsley root is a purer white, and it's often sold with its parsley-like tops still attached. In Poland nobody use parsnips to cook homemade chicken soup ( Rosół ). You can buy parsley root with green tops attached in the produce dept of some US markets . Parsnips and parsley root is not the same veggie.
@PolishYourKitchen4 жыл бұрын
OMG EWA!!! I feel so dumb! All of those years I've been cooking with it and never questioned it. Parsnip in Polish is "pasternak" and until you said it I didn't realize this.
