This is beautiful to watch. My grandfather was Polish (2nd generation here in America, raised in Chicago) ❤️ I wish I had learned this artform growing up and made my grandpa a Polish meal. He was very quiet, kind and was always happy with what he had on his table. He passed away in 2013 and every year on his birthday I think of him and want to make Polish cabbage rolls in his honor. I think this year I will make these ❤️ Thank you for sharing this recipe

I'm 76 and I learned how to make pierogy helping my mother until she passed. Now I alone make them for our family. Children never were interested to learn but one granddaughter is trying to learn so that makes me happy to carry on traditions.

I grew up in a small town in upstate NY with a significant Polish presence. St Nicholas church always had a “Polish Picnic” every summer. The ladies would spend a week making pyrohy for it. They had maybe 20’ of tables lined with heating pans keeping palm-sized pyrohy simmering in butter. My mother makes them, and taught me how to make them. I love them!, i have pyrohy once a week.

Married into a polish family 40 years ago, and one of the best memories I have is learning about and falling in love with my new family and learning the recipes. Nan, Aunt Helen and all of us younger folk would sit around and roll out the dough individually. I don’t know if this was just Nan’s method but we had so much fun joking about each other’s “free form” pierogi. We also used sauerkraut filling (Nan’s recipe). Thank you so much. My Dads Mother and Dad both came from Poland and came to Pittsburgh, Pa. Grand Pap worked in a Steel Mill, as did my Father, Uncles, and Brother. My Mother would add the fried onion to the potato and cheese filling and chill in the frig. I'm still in Pittsburgh and believe it or not had some this morning, 4/7/23 Good Friday. Pittsburgh Pirates are playing Ball @ 4 12 pm today. Season Opener ! Go Pirates !

My husband grew up in Weirton WV, his father worked for Weirton steel, Polish grandparents. My husband lived and worked in Pittsburgh for Alcoa until he retired and moved to CA, that’s where we met. I would have love to make these for him, unfortunately he passed away 5 years ago. I might still make them for myself, I love Polish food.

I used to love watching my grandma make these. I wish I had her dough rolling board, and wonder what happened to it. it looked just like yours. When she would brown them, it was always from a crock of bacon grease, and natuarlly, the onions were sauteed in the same !! Most of my relatives had heart problems, but they had very shiny hair!! SOOooooo good though!! Hard to say which filling was may favorite. When I was old enough, like 6 years old, my grandpa would say, "Tadzu, you drink kilishek of vodka, no cry, no cough, grandpa give you dollar!"

My dad's side is polish although his parents were born in the usa they didn't learn english until they went to school. We lived in a susurb of buffalo,ny that was a very tight polish community. I learnd to make pierogi from gramma. She used sour cream not water for her dough. Alas now i live in tils oklahoma and they've never heard of farmers cheese, so glad you gave recipe to make it myself!

So love this video / episode. We gather at my parents home, a day or two prior to Christmas Eve…… to make fresh pierogi for our dinner… your video is helping to provide a few extra wonderful tips! My son and his fiancé ( she too, has Polish ancestry…. ) have joined to learn and help (they are in their early 20’s ) for the past three years… ( mind you, my son has been helping on and off since childhood ), I am hopeful and and find comfort that they will help to pass the tradition on….. they also love the Holiday Polish sausage, I order special, and buy each year for part of our Christmas Eve meal each year… we live in a Chicago IL suburb…. Making fresh pierogi together is a wonderful family activity…. These days it also keeps some people off the screens and technology for a bit too! Recently, my daughter is learning to make simple noodles… a good practice for a life skill / work ethic that is so needed these days! Prior to the pandemic, we had stated to make pierogi for our Easter meal too…..

Hello, I did it!! You inspired me to make these lovelies. I made the cheese myself as per your recipe. I couldn’t believe how easy (and yummy) the cheese was to make. I had a bit of time with the dough sticking to the counter when I cut the circles, but I eventually figured out how much flour to use. My mom, my 14 year old son and myself gathered in kitchen and made them. I served them with sautéed onions and they were a huge hit. Thanks for your recipes, we will think of you when we make these again!

Have you ever heard of "Lazy Pierogi's"? My mom would make this quick meal in lui of making homemade pierogi 🥟 In a large, tall pot add several sticks of butter 🧈 and sautee shredded cabbage& sweet onions cooked until translucent and slightly browned. Boil and add a box of bowtie pasta, few cups of cottage cheese (sub for farmers cheese) salt/pepper.I measure the ingredients by taste.Thats how you make it with L ❤️VE!Just cook until everything is combined nice & warm. I like to let it cook on med low or low so the bowtie pasta soaks up the flavors.Cut up kielbasa is a delicious addition too. If you're not the best pierogi cook this is a meal with the delicious pierogi flavors without worrying about making the dough. 😋😋😋Soooooo good!

I live in upstate NY, farmers cheese is available at some grocery stores here. You can order it online. We use Friendship farmer cheese made in Friendship, NY. You can make pierogi with just farmer cheese and a little dash of pepper. I also love the sour kraut with caramelized onions and finely chopped sauteed mushrooms. You can freeze farmers cheese for up to one month.

I made these the other day and they were delicious. I'm lucky enough to have several Polish markets near me so I can get all imported ingredients. i even bought Polish butter to use in the recipe. To me the farmers cheese is a must and I'm glad I didn't have to substitute with cottage cheese. Cottage cheese is more bland. The farmers cheese had more of a cream cheese like smell and tang to it and it adds a lot of flavor and aroma to the filling. The next ones I want to try are the cabbage and mushroom. Even though I can buy them ready made from the market I'd still rather make my own.

When my grandma use to make her perogies, she only used Farmers cheese, grated onion and one egg for filling. Then she Would Use sour cream thinned down just a tad bit with milk to pour over Them. With Salt and Pepper at the End. Yum yum so good.

Thank you so much for this. My Bubba died when I was very young. Her sister is my great aunt. We made perogi a couple of times. I tried to figure it out. I have seen and emulated her recipe for dough. When I watched you, it all made sense. I used sour cream and olive 🫒 oil in the past. It made the dough un stretchable. Warm water is the trick. I made over 50, and I am on my way. Thank you for keeping bunsha in my heart.

Well my Mom and her 5 girls with all the girl cousins French, Polish, Ukraine, Russian combination on the prairies got together and made hundreds of these except we served them with sour cream with the butter onion fried lightly in the pan. Oh sooo good. All the aunties took part in teaching us all to roll, cook make and fry so many pierogies. Thank you for your lovely videos of Cabbage roll etc.

My Grandmother used different pinches to tell the fillings . I never knew this till I was helping my Aunt after Grandmothers passing and I asked her why she changed the way she pinched the dough closed and she told me that is how she was taught . I once used fresh wonton squares instead making the dough when my kids were little and I was too tired to do it properly. I know that was a bit sacrilegious but they tasted pretty good. I also used the wonton squares to make ravioli.

Growing up in Detroit in the 50's and 60's, one weekend in September my Mom, Dad, Aunt and Uncle would make 500 pounds of pierogies using both the upstairs kitchen and the kitchen in the basement. By Sunday night we had them all weighed and wrapped in freezer paper. My Aunt and Uncle would take 250 pounds home with them and we kept 250 pounds. These lasted all winter long. We didn't use onions in our potatoes but we did use dill. They were delicious. Great memories. Thank you.

Hello 👋 I have been making them for at least 57 years. My method is to add dill weed fresh & finally chopped to top off for decoration in the bowl. And add the dried dill weed in the potato and cheese and do not be afraid to sprinkle it into the mixture. As for freezing.. I have never boiled them first. In all of my years of preparing peroxiding. I simply p Freeze them on a flat floured tray and keep them apart so no sticking together..because they creat tiny tears and the filling spills out of it and it ruins it. When they’re almost frozen to the touch then pack them into a zip lock freezer bag and not to full in the bag. It keeps them from squeezing the perogi out of shape. Then when you are ready to eat them place in a pot of boiling water and a few drops of oil and a pinch of salt . So I use the handle of a wooden spoon to gently stir my perogi to not have them stick or burst them . I mean the wooden spoon usually is a small thin like shape and it is very gentle on them About 3 minutes to cook after they have all floated to the top. Sprinkle with the tiny salt pork Salt pork cuts into small tiny cubes more easily than the other not frozen pork. Cook them in a lg fry pan until crispy and golden brown but not burnt lololol Add same tiny chopped onion into the the cooking salt pork before it is cooked as you don’t want crispy onions.... You want soft and light golden and translucent Then add dried dill weed into the pan for the most delicious taste and smells in your home Stir and with the salt pork and all the drippings on top of the big bowl of perogi Yummmm serve with a dollop of sour cream on the serving plate of each guest.

Our favorite fillings are kapusta and blueberry, but I am going to try these this year, too!

You are a fantastic cook. I’m lucky because in New York I can buy farmers cheese in almost every food store. We have the Amish cheese which is old fashioned and natural or a verity of other brands. It’s a bit expensive at $4,99 a pound. My grandfather thought me how to make good pierogi, as he used to make them when he was in the Polish army in Egypt. He was an officer but they all knew he can make pierogi so they always asked him for this treat. He told me to always add a small cup of sour cream to the flour when making the dough. That’s what I do and the dough is great and easy to handle.

In my family we put fresh pepper mint into pierogi, we add lots of pepper and often also add bacon lard. This combined makes them flavoursome. We also like to make zeppelin pierogi, so instead of pastry dough we make a dough out if boiled and mashed potatoes with raw, grated potatoes and onion...yummilicious when oven baked

They do also make a dried farmers cheese that is carried in American supermarkets,it’s called Andrulus cheese. I grate it and it melts in the warm mashed potato then I add 1 small pkg. of cream cheese and it gives you a very good result. I also make the lenewi dough to make the peiogies. They are to die for.

My grandmother made Pierogies with uncreated cottage cheese,cinnamon w/sugar,egg yolk I believe. She boiled them as you do, and then fried in butter. Do you have the recipe? I love your recipes. They remind me of some of the things my mom used to make. Her family was from Prussia. The family emigrated to the US and luckily, so did their cooking. She would put caraway seeds on the turkey when she made it and I never knew why. I am going to make my first batch of sauerkraut soon. Oh how I adore them. I am brought right back to my childhood. I make them from time to time, but I do the super old school method of mixing the dough on a board. I've never tried to make these but I have eaten many. I like them boiled with a little butter. My dad used to prefer them browned in butter in a frying pan after boiling.

I'm 74 years old I remember my grandmother and my mother making pierogies with pot cheese back when they had pot cheese. Then they had to go to farmer's cheese. They did not add potato with the farmer's cheese. I also had potato and farmer's cheese pierogies which were also good but I preferred the pot cheese over all the other mixtures. Farmer's cheese was also good since I couldn't get the pot cheese thank you you brought back many memories.

From Australia 🦘 I travelled back to my parents Country Poland meeting my relatives for the first time! 2010..during my stay I tried pierogi wherever I saw them on the menu and was offered them from relatives!!!... Even travelling to Germany I tried them there but to my surprise (not really) my Mum's pierogi were and still are the tastiest and best ever! Mum is gone now 😢 aged 98 🙏❤️ since her passing every time I make and eat them I smile and reminisce about my loving beautiful Mum and miss all her other wonderful delicious polish dishes. 😘😋

I love polish food...I'm not polish but all the ingredients are delicious and healthy...I was 13 when I first tasted homemade perogies and I've never forgotten how delicious they were.. From ontario Canada

My grandma was from Suwalki Poland and my grandfather was from Minsk. We had homemade pierogies every Christmas. My favorite ones are the sauerkraut and mushroom ones. I love butter and onions on top and of course a side of sour cream doesn’t hurt either!👍🏻 I am upset because of the Covid virus our Polish restaurant in Houston has shut down but they do have a Polish grocery store next door to the restaurant and they sell the frozen pierogies.

I really love and enjoy your channel. I’m Italian and basically grew up in the kitchen. Both parents were excellent cooks and it was very important that we learn family recipes. I’m not afraid to tackle something new. So I made my own farmers cheese and I’m going to make this recipe. I like to cook things in large batches and freeze them so that when I’m feeling particularly lazy, all I have to do is pull them out of the freezer. I live in America state of Pennsylvania and found farmer’s cheese in a few of markets in the area.. it is very reasonable priced.

We tried this recipe and it was delicious! The pierogis turned out spectacular, just like babcia used to make them!
