Whoever say that this is the wrong and non traditional way of cooking adobo are missing the point, it never stated traditional in the title and anyone can mix and match to make their version as long as they've learnt the basics. I love adobo and I think this way of making it is just awesome! Looks really good! Reminds me of how my grandmother used to do the same thing of braising it first then frying it till it's crispy and served with the sauce or sarsa! Love it! 😄🍴

My Filipino friend always brings Filipino food to lunch and of course I know what adobo and taste like , and I think the adobo in the video is "very fancy" because from what I recall you just throw all of the ingredients in there and let it simmer for like 2 hours.

One thing that most international resto miss when imitating the “realness” of Filipino adobo is the way we traditionally cook it: Saute the garlic until golden brown and aromatic, then onions until caramelized, then meat. Simmer until water is reduced and natural oils remain on the pan. Then add soy sauce and whatever vinegar you have. Thus, the secret of a legitimate Filipino adobo is in the way you saute garlic and onion, the reduced fat of the meat, and the simmer soy sauce and vinegar.

I know adobo cannot be standardized by the Philippine govt, but the recognized "common household" way of doing adobo is just putting everything in a pot (some let it sit for an hour or overnight in the fridge) and let it boil and slowly simmer until reduced or the meat oil starts to separate if you are using pork belly. The idea of sauteing garlic and onions first, or searing the meat first (especially pork belly with fat) are just methods to do extra effort in cooking

you talk about legitimate / traditional way of cooking adobo but then proceed to say "add soy sauce".. there's nothing traditional or "realness" about that.. adobo is not even a "dish" per se, it is a method.. the key ingredient is *_vinegar_* and probably salt but not soy sauce.. maybe learn your history first before you speak of something you aren't educated of..

A lot still are in debate of using sugar as a seasoning, but really a small amount of sugar acts like a equalizer to balance out the flavors, it does not sweeten a dish.

Watching this video helped me feel okay with making my own version of Adobo. Every chef must make the recipe at least once before they start experimenting. So that's exactly what I'll do; make the correct version first and then experiment with it to make it my own way.

I have a adobo dish in a Pilipino restaurant with gata, it was my first time with adobong may gata, fr what i heard it is bicolano style. and some people put different ingredients in thier adobo. some put potato, or hard boiled egg, some with ketchup. I think it is how you feel like cooking your adobo as long as the basic ingredients are there, Soy sauce, Vinegar, garlic, black pepper, and bay leaf. some like it dry, some like it with so much sauce. and Leah Cohen is a chef, I think that is how she prepared her adobo for other people not only for Pinoy to enjoy it. And I am going to try her adobo version.

To any Filipinos reading this comment let me explain about the recipe. Adobo does not have a single kind of way of cooking or preparing, Adobo is prepared differently depends on the region or person in the Philippines, this version is just a complicated version of dish. Also to those people who said she “Americanized” it she didnt, there’re people in the country who made adobo like that if they had the time, I’m also Filipino who eats a different kind of adobo but all my relatives and friends made theirs differently. Do not bash the chef, i know how food works

The Chatterbox where that may be true (adobo being made in different variations) the way the adobo was made in this video was definitely not the adobo we know of in the Philippines. The meat is usually simmered in it's own broth making it stew like. It's not sauce you pour over separately.

you should watch Chef Claude Tayag's show "Chasing Flavors". Specifically the adobo episode. The adobo you're describing is something that's more common in your region of the Philippines. There are many different kinds of variations throughout the Philippines, including a yellow adobo that utilizes crushed turmeric. There are also many filipino food experts on the show that explains that adobo is simply NOT a dish but a cooking style.

You can get creative with food products, but within the bounds of description. Adobo is a stew, not a deep-fried product. In the EU, there are food items whose names cannot be used for items that do not fit the description. Same principle applies to adobo.

All these out of touch Filipinos saying this isn't Adobo. LOL. Spend 2 days in the Philippines, you will realize that your Adobo is plain and basic af. Adobo is a general term for a dish marinated in Soysauce, vinegar and garlic. Sometimes we don't put Soysauce in the Adobo, sometimes people put fish, sometimes people add coconut milk, sometimes people deepfry their adobo, sometimes people put potatoes or eggs. It varies from region and family. Don't limit yourself to basic af adobo. Try different styles!

I love that Filipino food is becoming mainstream, refined and marketable internationally. Any foodie knows how home cooked adobo is done, (depending on the region) but this adobo is an elevated version. What irks me the most are those purist Filipinos who think that their way of cooking adobo is only the right way. I’m pro Filipino food that’s getting exposure to other countries it’s still adobo, she didn’t deviate much from the basic recipe, she just cooked it on another level. I’m all about the smell, taste and texture and this one has all the components of it.

I never had this "complicated version" of adobo but it sure looks sooooo appetizing omg my drool. Though cooking adobo is for lazy people like me where you just throw all the ingredients in a pot, after the meat is tender and the sauce thickens its ready to serve lol

I don’t know if you’re being rude or just being inquisitive, but look into how other parts of the Philippines cook this dish. There are variations that use pineapples, coconut cream, or even a whole lemon or chilies in this dish.In a country of many different nationalities, we really don’t have a “universal” recipe for this particular dish.

You're nitpicking, there's no such thing a "traditional" adobo. There's always a variation to the dish as long as the basic is still there soy sauce, vinegar and garlic.

Kranium Dranium yeah, I see a lot of dumb fucks similar to this guy. It's not the "classic adobo" but it is more or less the same. There's many different takes of how a chef can make a traditional food, that's why they are called chefs, they take an existing food and make it their own.

One of the most important parts in making adobo is the rule where after you put vinegar, you should let the sauce simmer up to boiling before you stir the sauce. Filipinos correct if I'm wrong

Saudi arabian kitchen is not joking, ya know, you have to make a video about kabsa (كبسه) or kbibah (كبيبه) or even the asidah (عصيده) , asidah is usually made from dates, butter,flour, milk(not sure), and tons of black pepper. It's really tasty and warm, i love it!

Sa Bicol, ganyan ang Luto minsan sa adobo May gata, at pati dinuguan nilalagyan ng gata/ coconut milk, at pinalalabas namin ang mantika ng gata/coconut milk. Gaya sa Laing pinagmamantika sa gata ng niyog, dito sa manila masabaw ang laing, sa’min pinagmamantika namin sa gata ng niyog.
