Best episode yet... Learned so much from this guy, he's using techniques and equipment I never even knew existed. I myself am a chef but I never even knew that Water fryers existed and I have still have no idea what Rokusuke is or what it does in helping boil the udon. I am going to japan in a few months, this place might be a detour that I have to make some time for even though I only planned on staying in the Tokyo area
