Ingredients:
4 large potatoes, peeled and cut
Mustard seeds
Turmeric powder
Curry powder
Chilli flakes and powder
Tamarind
Thick coconut milk
Salt
Coconut oil
Pepper
Maldivian fish
Curry leaves and pandan leaves
Fenugreek seeds
Cinnamon stick
Cumin seeds
½ onion, chopped
2 garlic cloves, minced
Method:
1. In a pot, combine a little coconut milk, water, turmeric, and salt. Boil until the potatoes are cooked (about ¾ level). Drain and transfer to a separate bowl.
2. Heat coconut oil in a pan. Prepare the tempering by adding mustard seeds, curry leaves, pandan leaves, cinnamon stick, fenugreek seeds, cumin seeds, and garlic. Fry until golden.
3. Add the chopped onion to the pan and sauté until translucent.
4. Add a small amount of tamarind, curry powder, chilli flakes, chilli powder, and maldivian fish. Stir well.
5. Season with salt, pepper, and a pinch of sugar (to taste).
6. Gently add the boiled potatoes and mix.
7. Pour in the coconut milk and stir to combine, creating a thick gravy.
8. Adjust seasoning if needed and cook for a few more minutes to let the flavors meld.
