Potol posto-a creamy, nutty Bengali vegetarian delicacy with poppy seeds and pointed gourd

This recipe with poppy seed paste (posto) and potol is one our favourites. The potol turns soft and soaks up the creamy, nutty sauce. Potol ("parwal") occupies an ambiguous place in our hearts. It is not our favourite vegetable. Yet, so many of Bengal's vegetable delicacies are made from it: deep-fried potol, potoler dorma, potol pur, tel potol, doi or doodh potol, kumror-potoler chhoka, and of course the ubiquitous potoler dalna, with or without prawns, and fish curries. We grind its peels into potent bata and bhorta. We even make sweets out of it. I am beginning to suspect that we actually love potol!

I have been following you for so many years now and recreated many recipes of yours. But I bet Bong Eats, no one, literally no one, not even you can beat the potol posto my mom cooks. She is known for this recipe of hers in our families, our neighbourhood and also relatives and friends visiting from other countries. Not only Bengalis but non Bengalis too have fallen for this dish. Unfortunately none of us could ever recreate the taste that she brings to the dish.

Okay, so posto is exorbitantly priced (both at home and abroad), and I have yet to see potol sold anywhere in the Midwest, probably because of its perishable nature. It's my favourite vegetable and I will kill to get it from anywhere I can. But alas, my taste of potol remains restricted to the few days I spend in Kolkata every year.
