This brings back so many memories of my first job. Was in the kitchen of a local truck stop. We even had the same tile on the floor. I worked 11pm to 7am and made a lot of breakfast food and sandwiches. You run a clean and efficient kitchen. Any place would be lucky to have you on the grill.

I only found your channel a few weeks ago and have been going back to you earlier videos. I love all the videos. I do cook but am only a home cook for myself and my wife. You have taught me a lot in these. Watching the lunch video was great. I'm learning on lunch too. Thanks, and keep up the great work. Also, a small restaurant is much better in my opinion than the expensive Michelin star restaurants. I love what we back here in Idaho call hole in the wall cafes. Much better. Thanks again.

i work in a factory now, but as a part time job while working construction i worked as a line cook mainly at night. I respect you and what you do. Its a stressful job especially when it gets busy...and i was only part time making sandwich's and salads. Thank you.

tbh as a closer (cook, and front of house, Cross trained) you can learn a lot by doing a open/close respectively every once in a while. I remember my first open was to cover a cook who never showed up to unlock the doors I got woken up at 5am to WING my first open/breakfast.

I also noticed he makes the portions alot of restaurants pre-portion everything, the 5 star i worked at as prep and line i, i prepped portions of everything that went on the line, the non 5 star used frozen like this one but the frozen was portioned by the line not the prep

I work mornings myself.... in a well know restaurant and started on nights also. But mornings are my gig. Setting up the line, prepping the fresh daily. Cooking the mass amount of BACON for the day(about 400 rashers ) then on to the next item on the prep list. I cook all day long and then come home and watch other people cook....🤦‍♂️🤦‍♂️🤦‍♂️
