I have been watching your videos for a while. They are calming and satisfying as you complete each order. It was nice of you to give out food to the homeless at the end. I was homeless for a while when I was young. It was a struggle to find food everyday and some days I went hungry. So I know they appreciate it more than most people would realize. There is a long list of reasons for being homeless and its not always by choice or due to mental illness. Thank you for creating the videos and your positive contribution.

I've said it before and I'll say it again - as a former restaurant owner and manager, this guy is one I'd gladly not only employ - but *I'd build the damn kitchen around him* . I loved your comment about being a sloppy cook..... I've worked in several different kitchens over the years and you are probably cleaner and more organized than 90% of the chefs/cooks that I worked with. Most people have no clue what goes on behind the scenes in their kitchen. Best line I've heard is the difference between a 10 dollar dish and a 50 dollar dish is a stick of butter. Keep it up man, love your videos, takes me back to the days when I worked a kitchen.

Wow, you are feeding the homeless! How wonderful is that! It makes me so happy to see what a wonderful person you are. It’s interesting that people in our profession I think are more apt to do that than people in other professions. I sometimes, not often enough, hand out food and I have other friends who cook do. That’s wonderful of you guys pulled pork sandwiches on Thanksgiving for the homeless…… God is smiling.

I liked the new view at the end. And I used to be able to take 1 meal home with me each day at my old job. I used to see the same homeless man each night on my drive home. I started giving him my take home meal. It was a good feeling to help him. He seemed appreciative.

I just recently discovered your channel, and I'm hooked! I very briefly tried my hand as a line cook trained a half day on a Thursday and thrown in the mix the next day, which was their busiest weekday. I was fired at the end of that day, which was the first and only time that happened during my long employment career. Fortunately, I was waiting to start a campus police job and just wanted to work during the interim. I said all of that to say that I really admire and respect the very difficult and important work that you do and do quite well!! You have it down to a science, and even though I sometimes get a little PTSD, I really enjoy watching you work!! You are very poised and efficient under sometimes extremely stressful conditions!! I've done your job for 5 years and everything you've said is true. Not many could handle the job solo. I did 3 mornings and 2 lunch shifts a week and maybe 1breakfast during the weekend all solo, and yet on the shifts when I wasn't on they had 2 cooks. My co workers use to ask me why I wasn't stressed out, I told the what's the point of stressing. The people still need to be fed, and I just get on with feeding them. What is stressing out going to solve the situation. If the people didn't mind waiting, it was all good.

Important question for me. You use the Golden Griddle hashbrowns in the carton. It says to re-hydrate them with hot water for a time. I notice you just put them directly from the carton into the drawer below the griddle. Do you not re-hydrate then before putting on the griddle?
