This restaurant clearly needs better management. Food sitting in the window for that long is unacceptable! This man is solo in the kitchen busting his butt just for his hard work to come to a halt by poor table service. Management needs to hire more competent servers. Props to the cook for keeping a cool head. Thanks for your hard work and for the vids.

Only complaint I'd have is they should weigh and portion certain things. Fries and onion rings are cheap, and an experienced cook can eyeball some things, but pre-portioned would probably save money in the long run. Especially with things like the pre-cooked chicken breast.

@@splangley But you need time and material to preportion it. someone with a scale and a lot of additional waste. so maybe its just cheaper to eyball and give a little more than paying someone for half an hour ore more just for preportioning. And you have to get rid of that additional wate or need a lot of small trays that need to be cleaned after.

Recently I became the GM of a restaurant/bar in SoFlo and Nothing infuriates Me more than seeing that much food on the window. Sometimes when we have a busy service, I jump in and take food to our guests., but Amber needs to pick up the pace and get that food to the table ASAP! I’m impressed by your attitude and work ethics. You’re the type of professional I need in my kitchen. It’s incredible how smooth you run that kitchen. Everything is under control.

I must say your opinion about corn beef hash(corn beef with diced potatoes) cracks me up here in Hawaii. My son (23 yr old) still loves it with his eggs, rice and spam in the mornings so I usually cook it for him. I eat it too but I agree with you, it does look like dog food...lol. I love watching your videos and it shows me it is possible to cook fast, safely and accurate but it really takes a special skill set to do what you do and you got it!!! I've been cooking for my family and parties for over 50 years but not too many people can do what you do, great job!!! You give me new hope that the younger generation can do it!

I am 60 always been a great cook. Fast efficient like this man here only he has way more energy lol. I even cooked at Military Fests n BbQs lots hungry people this guy tho to have stop do orders n make so many different things and be so clean as well Next level!! I would have hope for the new kids but 🤷🏼♀️ idk my daughter at 21 put pizza in oven came home smoke n fire alarm cuz she went back upstairs to play video games. She can barely boil water without help. My gs is 21 in September we came in door smoke alarms going off horrible smell. He love video games imagine that! 😮 He put a cup of mac n cheeze in microwave set 4:30 n never added any WATER . Idk just kinda scary!! I think this man is one of kind special!

The flow of a restaurant starts at the door. Keep the seating at an even pace. If a restaurant was a maritime ship, the host is the bow and lookout, the FOH is the deck, the manager is captain, the chef is the engineer, and the dish crew is the bilge. You can't barrel through the Drake Passage on a small boat with minimal deckhands, engineers, bilges, and lookouts. Same as you can't overload your hosts, FOH, cooks, and dish crew in a restaurant rush. But you can determine the direction of your bow. And you can determine the rate of your seating. I used to use this as a metaphor to help this concept stick during training. By the way, you're doing an awesome job. Watched the whole thing. Holding basically at least 3 stations. Super chill. Suuuper clean. Cool.

Im a cook and I can tell this guy got some interesting techniques and is very good at queuing every plate he’s about to serve. He knows the time it takes for everything and what he should start next. If it looks like he’s slow, it’s cuz he’s going at the pase of the servers. No point in making all that food if no one can run it to the tables.

It really doesn’t matter what else the servers are doing, they know food comes out for them to serve, so they always need to be attentive of the window, especially if it’s a big order. It’s part of their job to keep an eye out on the window so the customer gets served hot, fresh food.

The servers have to balance taking order with serving them . They have to stop taking orders to get out what is already made . You did right but your also right I would be pissed if a big order like that came out cold I'm sure that was close to $100 in food. that was a massive backup. omelettes are harder to make in a pan I have a small flat top it's easier to do it flat .

To everyone commenting that they could do better, it’s no big deal, I’d pay to watch you even try. Anyone who works in a kitchen would respect this man 8 days a week for this level of skill. As an owner, chef, and manager myself, I’d feel the onus on me to be hiring some extra servers and avoiding this problem moving forward. As much as possible. There will always be short staff days where things just slow down a bit, it’s part of the game, but I’d be wanting to take the pressure off the FoH with some backup and ensuring the food was making it to the customer properly. No one wants to eat cold food nor does anyone want to deliver it.

Back of house is far harder than front. They just have to deal with shitty customers, walk back and forth making sure an order gets to the right table. You got the whole order up ready to get picked up and front of house is killing you cause half the customers on that table are gonna cry there foods cold and you gonna be refireing that table while you are getting your other tables out‼👀 been there where you at front of house got to get tighter
