Hey Alex, I recently graduated college and I now work in finance. Man I cannot tell you how I love to watch your videos and listen to the background of you cooking. Throughout college, I worked in many kitchens and somehow the sounds your videos produce bring me back to a happier time during my undergradutate career where I felt: secure, happy, and ready-for-the-world. I used to hate working in kitchens, but now that I hate my current job, I absolutely miss the passion it took to work in a kitchen. Thank you.

I always appreciate when a cook pre sprays any dishes before us dishwashers come in. It's soooo helpful. Because nothing gets all dry and crusty which will take more time for us to clean thus making the kitchen slower

Hello I just saw your video where a lot of dishes you prepared was stacking up, I was very amazed that there was only one cook in the kitchen YOU.. I've always thought there was two or more but watching you handle yourself in the kitchen it made me appreciate what goes on behind the scene in the restaurant. Try this. Measure out a portion of egg mix for the french toast in a dish and let the bread soak it up. Cook it, make sure you let the inside cook, done right you should end up with a custard like french toast. See if that turns it up a little.
