I really like the 1st & 2nd meals...they are typical of what my family would like...and I do like the easiness of making the dishes...definitely am adding them to my next weeks shop...thank you :)

Great ideas and thank you for sharing. A lot of people have good food in the house, but cry about being poor because take out or expensive groceries are not in the budget. You demonstrate so well how to live abundantly (and healthfully) while spending very little money. Bravo! I'm not sure whether this next point happened just on my antiquated laptop or whether this was experienced by others. The video went black and had only music the latter half of it. Not a big deal, just wanted to mention it in case there was a glitch. Thanks again and take care.

Have you ever tried taking one of your main ingredients and making your first dish, then putting aside an amount of it for another meal? Like making black bean burgers, saving some of the mixture to make black bean enchiladas for the second. I have Sandra Lee’s cook book called: “ Money Saving Meals and Round Two Recipes”. I know soups are a great way to save money and to use up leftovers, but I am done with a soup after two meals of it. So, if someone wants to save money and stretch their meals out here is one thing I do. Buy a bag of kidney beans and fix these dishes out of them: Red beans & sausage cooked served over rice; take the red cooked beans ( sausage too) and make a pot of chili( I even add in black beans too); now make chili dogs topped with some crisp,raw, shredded Cabbage; any chili leftover make meat & bean burritos, enchiladas, hot tamale casserole or add it to some velveeta cheese with regular size jar of Pace Picante Sauce for cheese dip that can make chili cheese fries. I try to pick something that I can use in many ways. Even the red beans in the first dish can be turned into soup served with a little rice…then cook it down to a thicker consistency to have the red beans and rice. Did you know that a box of scalloped potatoes can be baked as directed then leftovers can be made into potato cheese soup. I am getting ready to take some leftover loaded cream potatoes and turn them into potato soup. Did you know you can take small amounts of breakfast sausage (ground), tiny bits of pork roast or chops, and if you saved enough of sausage from when you first cooked you can make a Cajun rice dish called Jambalaya…that will serve four to six people( adults). When I shop I try to create a menu for the month to help me pick things I can use to create as many dishes I can. Pizza is on the menu a lot towards the end, because you can create so many different kinds and basically clean out the frig and freezer. You can even do a copycat version of Red Lobster pizza on thin crust or on tortillas. Creativity needs to start with the menu then trickle down until your next pay check.

I love all of these ideas, they sound delicious! I am definitely going to look for that book. Thank you

That's why I only buy frozen corn, peas, regular green beans & carrot coins!! Then I can mix & match them to get several different veggie combos during the month. Also being single, I cook several servings at once!!

You should never lock the lid during the cooking process, only lock when transporting.

Good advice! I will make sure to do that next time.

My darling,I don’t think you understand the real meaning of poverty.You have chicken,flour,potatoes….and celery,onions,carrots,eggs and power,electricity power.This is so far from being poor.I know you have sugar in the house.But I do appreciate you cooked everything from scratch.Yet, from one chicken you can feed your family for one week.No oil involved.Wish you all the best!

BTW,imagine you have left to cook with just bones,roots,salt and pepper.The result is incredible

It's more of a tax bracket. And you're right, this definitely doesn't touch true poverty levels. But these are just ideas for people living on a lower income. You sound very sweet. Thank you for the chat

Poverty today is not the same as it was in the old days!
@debbylowry7119Сағат бұрын
I wasn't going to comment, but I also thought that this wasn't "poverty." It is all homemade, though, and made with real food. That is great! Let's face it: poverty food is not always complete nutrition. That is probably why these recipes were used. Incomplete nutrition is better than no nutrition or starvation.
