I’m not good at cooking or (especially) seasoning so I’m following your suggestions and I’m cooking just three thighs though because it’s just me (they’ll be for dinner and lunch), so I’m just using the middle rack; I did 375 for 25 mins then put them back in for 15; they weren’t quite done so I’m doing another five minutes (but when I cut into them they were really crunchy)

That’s awesome! I found a new way to do them. Put them upside down for 20 minutes then turn them over for about 15 minutes! Perfect

It seems when cooking / frying chicken the upper shelf will drip it’s grease on to the lower shelf before making it into the grease pan in the bottom

You are absolutely correct. That actually helps the skin crisp up. it does not drip a lot, but the grease that does drop only makes it that much better. you would be surprised there is not that much grease. great question!!
