1. Target the time around 3:30. You need to grind finer. 2. If its not a dark roast, do a swirl after your first pour (not counting the bloom). 3. Try to pour till 60% of water after the bloom phase i.e. all the way till 150ml at around 1:20. And finish the pour of water by 1:50 to 2:00 which you anyways did.

hoffmann's method also includes swirling after the first and the last pours. is there a reason you didn't swirl?
