I enjoyed this special peek into these ladies' kitchens! So many delicious dishes and happy memories of my own Grandma. I love German from Russia dishes and treasure the tastes! One of my favorite busy day German meals is one both my Mom and Grandma made, called simply cucumber salad with potatoes and sausage. Sliced cucumbers, a radish or two, and a tablespoon of diced white onion are dressed in white or red wine vinegar, cream, onion powder, salt and pepper. While this chills in the fridge, peel and cube several red potatoes and steam-boil them in a covered saucepan in an inch of water seasoned with a tablespoon each of butter and diced onion, and some salt. While that cooks, cut and fry the German sausage in a big skillet. With any luck, everything is done at the same time! This is my favorite easy comfort meal; make sure to load your fork or spoon with some of the cucumbers and potatoes together in each bite. The contrast between cool/crisp cucumber and hot/soft potato is irresistible to everyone I have served it to. XOX ~Michele
