A light, clean, crisp lager is one of my favorite beers to make. In the last few years I have come around to using corn and/or rice in these beers to change it up, and it makes them even lighter. The corn seems to add a particular flavor that gives it a familiar taste while the rice seems to be more neutral. When they get super clear like that it's really a delight. It's funny because when I started getting into beer more and then brewing 24 years ago I was pretty anti adjuncts like that. Now I see their place. I even made a Cold IPA with flaked. I am usually an Ale drinker but I really like the Pre-Prohibition lager recipe Your Father’s Mustache by Jeff Renner, it is one of my summer go to beers. Your looks so beautifully bright and clear, I imagine it tastes great.

Beautiful beer. Curious as to when you fined. I never fine and go with time. You stated that it took time to clear but gelatin should do the trick quickly. Most folks add to the keg which I am completely against. I refuse to open a keg of a finished beer. Cheers!

how long did you do a step mash for from 140f for 30 minutes then raised to 148f for an additional 30 ?

I rested at 140 for 15 minutes, then ramped up the temp to 152 for 90 minutes more.

How would you recommend going about brewing this recipe if your electric brewing system (Brewer's Edge Mash & Boil in my case) doesn't allow for a step mash?
