I always make a dressing very close to yours. I've always used garlic powder instead of fresh garlic before, but I'm going to try it next time! And I also add onion powder to mine. I tried that brand of red wine vinegar that you use, but my taste buds prefer Colavita red wine vinegar! It's really mellow for vinegar. A lot less bite. Occasionally I like to change it up and add a little balsamic vinegar for a touch of sweetness. Also, I think it was a great idea to use a blender as well ! Grazie ! Ciao !!

OK so I've made this about 6 times now, and we're using it for everything - salads, which we eat a lot of, marinade...this is great. I live in a ridiculously hot climate and I really have to refrigerate this given the garlic (a lot of horror stories about garlic and oil online). But when you refrigerate it, it separates, and the olive oil thickens, and you have to leave it out for awhile if you want to use it until it warms up. A solution to this issue is to add about one tablespoon of dijon mustard (I use Grey Poupon). This emulsifies things nicely such that while it still thickens a little in the fridge, it doesn't separate nearly as much, and I don't mind the extra kick it gives. While not traditional, it solves the fridge problem.
